One thing I enjoy doing as a foodie and novice chef is to BAKE. The story behind this is quite interesting, so why don’t I just go ahead and spill the beans before we jump into this scrumptious cookie recipe.

I was never the baker in my house. Sure I loved being in the kitchen, like most little girls, watching my mother cook our meals as well as bake tasty desserts.

To be perfectly honest, when I did try my hand at baking cakes and even cookies, I was the one covered in flour and the kitchen a disaster—I was indeed a messy baker.

Fast forward to today. I have come a very long way. I am fearless in the kitchen. I take pride in the fact that I am much more organized and tidier. The majority of the flour is now in the mixing bowl rather than on me.

I’m now much more confident in my skills and abilities as well as my creativity to develop and adapt recipes to fit my sugar free, low carb and ketogenic diet. Take for instance this NEW recipe, my Krispy Keto Sugar Free Cookies.

This is a sugar free cookie from the sweeteners to the many toppings included in this recipe. They were chosen because they are sugar free and keto-friendly ingredients. However, instead of using my usual nut flours (i.e. almond and coconut) which are more keto friendly, I chose oat flour instead. Not to mention, it’s super healthy, though the calories are slightly higher.

I must confess I’m still trying to perfect my baking when it comes to both of these nut flours because of their texture in baking compared to white flour and a few others but with time, I’m sure I will become more confident in using them in more baking recipes.

RECIPE

Krispy Keto Sugar Free Cookies

Scrumptious cookie recipe that’s chocked full of keto-friendly and sugar free ingredients make this not only krispy but cookie-licious!

Ingredients

  • 8 tbsp Butter unsalted
  • 1-1/2 cups Goalz Allulose Sweetner or other
  • 1 cup Swerve Brown Sugar for sugar free
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 2 cups Oat Flour
  • 1/4 cup Birch Benders Keto Original Pancake Mix (optional)
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 4 oz ChocZero White Chocolate or other cut into chunks
  • 4 Oz Goalz Chocolate Chips or other for sugar free
  • 1/4 cups Walnuts chopped
  • 1/4 cup Ratio Keto Friendly Coconut and Almond Granola or other
  • 1/4 cup ChocZero Smallows (freeze dried marshmallows) or other

Instructions

  1. In a small saucepan, melt and brown butter for approximately 5 minutes. Remove from heat.

  2. Add sugars into a mixing bowl with the browned butter and mix until combined.

  3. Add in one egg at a time and continue mixing. Then add in the vanilla.

  4. In another bowl, whisk to combine flour, baking soda, and salt.

  5. Add the dry ingredients into the wet. Mix until thoroughly incorporated. Then gently add and fold in all of the remaining ingredient until just combined

  6. Chill the dough for 30 minutes or several hours before baking.

  7. Preheat oven to 350 degrees.

  8. Pinch off cookie dough and roll into a medium sized ball.

  9. Place on a nonstick or parchment lined cookie sheet pan and bake in preheated oven for 10-12 minutes or until cookies are a light golden brown.
