Try This Recipe Twist On Your Next Meatloaf: Spicy Bread Custard and Cheese Mexican Meatloaf

As chefs and foodies, we are always thinking of what we can do with food, such as what type of food to prepare at home as well as for recipe sharing? What sides will best accompany the main course and let’s not forget those indulgent or simple but delicious desserts? Will it be a play off of the familiar or something new, and not just for myself but rather the many web seekers in search for information including recipes for themselves and their families.

Baking and cooking also involves mapping out a plan much like anything else (e.g. news, tv shows, pro athletes games, etc.) And so it is with being a home chef and recipe developer. I always try to plan out my meal and how I envision it coming together. So here is how this particular recipe was born in my test kitchen.

Well the other day my plan sort of came together. First, the type of food—and Mexican it was. The side would be something old—that is, something I had made before and that recipe is posted. However, being this was Mexican themed, the only variation with this side was with the cheese. However, the main course which is the primary subject of this recipe post is my NEW Spicy Bread Custard and Cheese Mexican Meatloaf.

Spicy Bread Custard and Cheese Mexican Meatloaf

The process involved seasoning the ground beef and shaping it into a small rectangular bowl. Bake the meatloaf for 20 minutes (par bake like you would a pie is what I did). Drain off the fat from the meat and set aside while you make the bread custard.

After making the flax bread custard, pour it into the dipped area created on the meatloaf and over the top. After which, it’s topped with two type of cheeses, then it’s just bake and wait (approximately 45 minutes or till bread custard is done. While this is different from the traditional sauce topped recipe, the spicy custard is still very moist on the meatloaf making it still very delicious.

So, as you can see the name of this recipe is the only thing complicated about it. However, I believe that you will enjoy it like my family did. This spicy Mexican meatloaf did not make it into the next day. 🙂

Bread Custard and Cheese Mexican Meatloaf

Ingredients

For meatloaf

  • 16 oz Ground Beef
  • 1 tbsp Garlic Powder
  • 1-1/2 tsp Smoked Paprika
  • 1 -1/2 tsp Chili Powder
  • 1 tsp Ground Mustard
  • 1 -1/2 tsp Cumin
  • 1 tbsp Adobo Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Red Pepper diced
  • 1/4 cup Onion diced
  • 1 tbsp Jalapeño diced
  • 1 large Egg

For flax bread custard

  • 1 cup Flaxseed Meal (or corn meal can be substituted)
  • 1 cup Almond Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 cup Allulose or sugar
  • 1/4 cup Almond Milk, unsweetened Or whole milk; use a bit more if needed.
  • 2 large Eggs
  • 3 tbsp Mexican Crema
  • 1 tbsp ZERO Sugar Honey, Jalapeño flavored
  • 1 large Egg
  • 3/4 cup Cabot Habernero Cheddar Cheese grated
  • 1 cup Mozzarella cheese shredded
  • Cilantro, chopped 1 tablespoon for inside of meatloaf and for garnishing.
  • 4 tbsp Unsalted Butter melted

Instructions

For the meatloaf

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine the ground beef and spices.

  3. Dice red pepper, onion, and jalapeño pepper.

  4. Add the chopped vegetables to the ground beef. Note: Do not overwork the meat.

  5. By hand shape the beef into a rectangular shaped bowl. Note: See photo

  6. Sprinkle meat with grated Parmesan and chopped cilantro.

  7. Bake the meatloaf for 20 minutes and then temporarily remove from oven and set aside.

  8. Meanwhile make the flax bread custard.

For the flax bread custard

  1. In a bowl, whisk together the flour, flax meal, baking powder and salt.

  2. Add the sugar, almond milk, crema, honey, eggs and cooled melted butter. Mix until smooth.

  3. Pour flax batter in the meatloaf bowl and over it. Sprinkle all over with both cheeses.

  4. Bake for 45 to 1 hour

  5. Top with chopped cilantro.
