During the earlier days, apple fritters have long been a family favorite and considered a special treat to be enjoyed when those (though infrequent) bakery runs were made.

More recently, I begin to recall how much my eldest sister loved buying these tasty breaded and deep-fried apple fritters from one of the best local bakeries just about every Saturday morning. I know because me and my twin were always the pick-up and delivery girls during those Saturday visits.

So, I simply couldn’t pass on making up my own special apple fritter recipe in memory of her. Also, because my diet has changed it’s much easier to make them myself especially since I’m now sugar-free, low carb and keto. That’s why I chose ingredients in this particular recipe to suit my current lifestyle but if you prefer this recipe will still work for you even if your diet is not one of the above—just SWAP.

The flour I chose, though it is not as keto-friendly as the nut flours (i.e. almond and coconut) I commonly use in my recipes, it is very healthy especially with its fiber content. Furthermore, I find it to be slightly more stable in baking some foods than the other two. So for now I thought it best to use oat flour in this particular fritter recipe. NOTE: Oftentimes I use a combination of flours in my baking and it totally works and undoubtedly could have been successfully performed here, but maybe next time. 😉


SHORTCUT OF STEPS

Peel, core and dice organic apples.
Combine flour, sugar, baking powder, salt, cinnamon and nutmeg.
Add milk, egg and vanilla and mix until incorporated.
Fold in chopped, diced apples.
Deep fry until cooked inside and golden brown for 2 to 3 minutes both sides.
Allow fritters to cool before glazing.
Dip both sides in prepared glaze. Allow glaze to set for a few minutes and then enjoy warm.

WHY THIS RECIPE WORKS

This fritter recipe absolutely work because it deep fries beautifully. Secondly, using the oat flour is a much healthier alternative than white processed flour. However, if you decide to use white flour in this recipe, always choose unbleached as it is a healthier substitute.

In my apple fritter recipe, I use light brown sugar over white refined sugar, plus it’s sugar free. I like the taste of vanilla in donuts so it’s added in. In addition to not simply using cinnamon spice alone like in most traditional fritter recipes, I added a little bit of cinnamon’s kissing cousin too—nutmeg.


TIPS AND SUGGESTIONS

It is important to remember like in cake baking, to not over mix the batter unless you would prefer a tough fritter. However, it’s much less likely to occur in this recipe because of the type and texture of ingredients being used. A good rule of thumb is to MIX always and only until ingredients are thoroughly incorporated or combined. Nevertheless, moving on.

The temperature for deep frying should be no less than 350 degrees and the level of the oil for frying should measure at least 1-1/2 to 2 inches using a heavy pot or Dutch oven which is much better for deep frying.

Using 1/4 of a cup measurer carefully drop batter into hot oil—gently moving it around initially with a kitchen tool known as a spider—to help assist fritter in spreading out just a bit. Typically the fritter, depending on size, will cook and brown usually within 2 to 3 minutes on both sides or until golden brown.

Ingredients

  • 1-1/4 cups Oat Flour
  • 1/4 cup Light Brown Sugar Swerve Sugar Substitute
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 cup Whole Milk organic
  • 2 Large Eggs
  • 1 /2 tsp Vanilla Extract
  • 3 regular sized Apples organic
  • 1-1/2 to 2 inches Avocado, Olive Oil or Canola Oil For Frying

Instructions

For the apple fritters

  1. Whisk flour, sugar, salt and spices together.

  2. Create a well in the flour mixture and add milk, whisked eggs, and vanilla. Gently stir to combine all ingredients until incorporated. Do not over mix.

  3. Heat oil in a large pan or Dutch oven until it is at 375 and no less than 350 degrees. Verify temperature with a candy or other kitchen thermometer.

  4. Peel, core and dice apples. Gently fold the apples into the fritter batter.

  5. Carefully add and drop the fritter batter using a 1/4 cup measurer into the hot oil. Gently move fritter around initially to allow batter to spread just a bit.

  6. Deep fry on both sides for at least 2 to 3 minutes and/or until golden brown.

  7. Drain fritters on a dish lined with paper towels.

For the vanilla glaze

  1. Mix to the powdered sugar, milk and vanilla.

  2. Swirl slightly cooled fritters around in glaze, coating both sides.

  3. Place fritters on a wire rack with a baking sheet beneath to catch the drippings and any excess glaze.

Recipe Notes

Whenever possible, use organic ingredients.

FOR APPLE FRITTER BITES

To make Mini Apple Fritter Bites, follow the above recipe. Drop about one tablespoon of fritter batter into hot oil and fry both sides until golden brown. Cool. Then dip into vanilla glaze.
