The most important meal of the day usually don’t get bypassed by this organic health foodie. For me, after having not eaten after dinner for at least 14 hours, I’m definitely ready to break the fast and enjoy some form of breakfast the next morning.

Well of course, being both health and food conscious, I usually want my meals to be as healthy as I can possibly make them, and that includes cereals, fruits and every other type of breakfast food—and yes I prefer my foods to be primarily ORGANIC too whenever possible.

With my new life style change of not only preferring to buy organic foods, I decided to cut out refined sugar and white flour and many other high carb foods too having made the switch to a sugar free, low carb and ketogenic diet.

So, many of my recipes may reflect some of these changes but certainly not all because I write and develop recipes for foodies of all walks of dietary life. 😊

Also, the recipes can be adapted to suit you and your own individual food preferences even if you are not sugar free or following a low carb or keto lifestyle. Just be sure to choose healthy and wholesome ingredients. Anyway, on to the recipe—-my Breakfast Mini Air Fried Pancakes Pops.

Mini Air Fried Pancake Pops

These are mini and light pancake pops and yes they are a definite play off of the cute and popular Cake Pops where baked cake is combined with frosting, rolled up and assembled on a stick—followed by simple to even festive decorations and these pancake pops are by no means any different.

My breakfast pancake pops simply combine pancake mix and maple syrup together with a touch of almond milk or water. They are then rolled, however unbaked, like a round candy pop and decorated with breakfast ingredients such as oats, nuts, confetti sprinkles, or just left plain an then air fried, pan fried or even oven baked. It’s really up to you, though I air fried these. Also, just use your own imagination concerning your choice of toppings but more importantly have fun making these little treats.

Air fried and/or baked pancake pops. Can also be pan fried. If so, make sure they have firmed up well.

The pancake pops should be refrigerated overnight or if making the same day, for at least one hour to firm up before either air or pan frying or oven baking. Also, I recommend using a little smaller pop stick —preferably 3 inch—as the 4 inch cake pop stick was a little too heavy for my fairly small pancake pops.

4 inch cake pop sticks where slightly heavy for this pancake pop size. Make large pops or reduce stick size to 3 inches (the minimum available on Amazon).

However, If you decide to use the more common 4 inch cake pop stick, try making the pancake pops slightly larger than mine here and double the recipe. Bake for 15 minutes, or until browned and the center is cooked through. A toothpick can be inserted to check for doneness. Also, allow them to cool and firm up completely before inserting the pop-stick into their center (i.e. so they don’t pull apart) and before eating and dipping these delicious mini bites of pancakes into your choice of maple syrup, chocolate or any other fruit sauce.

Allow pancake pops to cool completely before inserting pop stick.
Dip in maple syrup or enjoy as is.

Mini Air Fried Pancake Pops

Ingredients

  • 1-1/3 cups Birch Benders Original Pancake Mix, Keto Friendly
  • 1/4 cup Zero Maple Syrup by Wholesome Yum
  • 1 tbsp Cold Water or Almond Milk

Instructions

  1. In a medium sized bowl, combine the pancake mix with the maple syrup and water. The mix will appear crumbly but when pinched should stick together.

  2. Roll up the dough into 6 balls. Garnish with choice of toppings by rolling the sticky balls over the ingredients. Note: If necessary add another teaspoon of water or almond milk if the dough is to crumbly

  3. Place pancake pops on a nonstick or buttered baking sheet.

  4. Air fry at 300 degrees for 10 minutes. Then reduce time to 250 and bake for an additional 5 minutes on lower temperature to avoid over browning. Test doneness with a toothpick. Note: These pop cakes can also be pan fried or oven baked for around the same time.

  5. Allow the pancake pops to completely cool before inserting the pop-stick, and to firm up for dipping.

  6. Enjoy with maple syrup or fruit sauce of choice.
