ON THE MENU TODAY…
Tangy Chicken and Artichoke Dish
An easy chicken recipe using tangy artichokes, where this marriage combo simply doesn't get any better or tangier!
Ingredients
- 2 cups Tyson Southwestern Grilled Chicken or other brand cut into pieces or thick dices
- 1 16 oz. Artichoke Hearts chopped
- 1/4 cup Red Pepper diced
- 1/8 cup Scallions sliced
- 1 tbsp Juice from 1/2 Lime
- 1 tbsp Con Azafron seasoning 1 packet
- 1 tsp Salt or to taste
- Dash of Pepper
- 2 tbsp Culantro or Cilantro chopped
- 3/4 cup Sour Cream
- 6 slices Provolone Cheese
- 2 cups Cooked Ziti or other pasta
Instructions

Salt and boil water to cook pasta until it has a slight chew.

In a pan, saute red peppers for a couple of minutes.

Add the scallions and cook for an additional minute or two.

Add the chicken and cook until warmed and cooked through.

Add the chopped artichokes with one tablespoon of juice from the can, and the lime juice.

Season with Con Azafran, salt, and pepper.

Add in chopped cilantro, and remove from heat.

Stir in sour cream and place mixture in a sprayed 8x8 casserole (or square baking dish) over cooked pasta. Top with provolone cheese slices.

Place under the broiler in a 350 degree preheated oven for 5 minutes or until cheese is melted.
