This sandwich recipe is definitely for those looking for a a fairly quick, healthy and delicious way either to jumpstart your day for breakfast or at any time really. If that’s you, then my creamy and savory Spanakopita Sandwiches will do the job quite nicely.
This spanakopita recipe is not overly complicated because who needs that the first thing of the day or while on a quick lunch break, right?
Well these flavorful spinach, cheese, onion and garlic sammies on a flaky croissant come together rather quickly. Plus, this recipe is extremely forgiving as you can feel free to add other toppings creating your own variety (as demonstrated here in photos) or you can simply leave them plain and as a vegan sandwich if preferred.

Flaky Spanakopita Croissant Sandwiches
Savory and creamy spanakopita filling, sandwiched between (or on top of for halves) flaky croissants.
Ingredients
- 3 HERO Brand Croissants or other halved
- 2 tbsp Butter
- 2 cups Spinach fresh (frozen will also work)
- 3 tbsp Onion, chopped
- 1 tbsp Garlic minced or grated
- 2 oz Cream Cheese diced
- 1 Egg large
- 1/2 tsp Salt for seasoning the egg.
- 1/4 tsp Black Pepper for seasoning the egg.
- 1/4 tsp Cayenne Pepper for seasoning the egg.
- 1/4 cup Mozzarella shredded
- 3 tbsp Feta Cheese crumbles
Instructions

Preheat oven to 350 degrees if using standard oven or toaster oven.

Add the butter to a medium saucepan on medium high heat.

Next add in the onion and cook for a couple minutes or until onion is translucent. Then follow with the garlic and cook for a few more seconds.

Add in the fresh spinach. Sauté until it is softened. Reduce heat and add in the seasoned salt and peppered egg, diced cream cheese pieces, mozzarella and feta cheeses; stirring continually until egg is cooked and cheeses are melted.

Remove from heat and spread spanakopita filling on one half of the split croissant and softened butter and/or other toppings (e.g. deli meats..) on the other half.

Place tops on croissant halves and place on a nonstick baking sheet.

Bake and toast sandwiches for 7 minutes until warmed through and croissants have crisped.
