If you like chicken as much as I do, as well as that green food that pops out of Popeye’s can giving him super human cartoon strength—SPINACH—then you’ll definitely enjoy these Mini Spinach Stuffed Chicken Bites.
This simple recipe involves grilling the meat. However, baking the chicken is also fine, especially if you’re crunched for time. Obviously grilling any type of food will yield more flavor, but it’s as much about the green stuff inside as well.
These are super easy to throw together for your next party or function where you can serve them up as either delicious appetizers or the main course as these chicken bites are extremely satisfying.
Spinach Stuffed Grilled Chicken Bites
Grilled chicken thighs wrapped around a bite of savory sautéed spinach and jalapeño cheese.
Ingredients
- Chicken Thighs, seasoned and grilled
- 8 oz Spinach Frozen
- slices Jalapeño Cheese Slices or other cut in halves
- Salt to taste
- Black Pepper to taste
- 1 Yellow Onion diced; more depending on amount of chicken.
- 3 Garlic Cloves minced; more depending on the amount of chicken.
Instructions

Preheat indoor or outdoor grill.

Season chicken thighs with salt and pepper and any other type of rub.

Sauté defrosted spinach with onion and garlic for 5 -10 minutes.

Grill chicken until done. Allow chicken to cool.

Place a halved slice of cheese and place over the warm chicken and follow with a tablespoon of spinach. Use a toothpick or skewer (depending on the size of the thigh) to hold the chicken closed.

Place on serving plate and serve while warm.
