Easy Single Serving, Low Calorie Buttermilk Pancake

Did you know that you can literally skip the trip to buy that box of pancake mix? If you have these basic ingredients in your fridge and pantry, you can make a delicious single serving pancake yourself when you’re in a hurry or just want to enjoy that warm flapjack with melty butter and syrup.

All that is needed for this quick and super easy pancake recipe is flour (both almond and white to reduce the calories), a hint of sweetener or sugar (this is totally optional if you like them slightly sweet like me), an egg white, and of course good ole tangy buttermilk (or any other of milk of choice). FYI both almond and coconut milk will make this pancake even lower in calories.

NOTE: I used equals parts of both almond and white flour and not just almond flour alone, for better stability and texture of the fried pancake. However, feel free to use almond flour alone or with equal parts of coconut flour if preferred. The texture will be different but it will still be quite delicious!

Easy, Single Serving Buttermilk Pancake

Ingredients

  • 3 tbsp Almomd Flour
  • 3 tbsp White Flour unbleached
  • 1/2 tbsp Allulose Sweetener or sugar if preferred (This ingredient is optional) Amount more or less, to taste
  • 1 Egg White or substitute with 1/2 tablespoon Meringue Powdwr mixed with 2 tablespoons Water, if dairy free.
  • 1/4 tsp Vanilla Extract (optional)
  • Oil of choice for frying
  • 3 tbsp Buttermilk This recipe uses buttermilk but if preferred, use milk of your choice to reduce calories.

Instructions

  1. Combine all of the ingredients and mix well.

  2. On medium high heat, melt oil and fry pancake until golden brown. Enjoy!
