This is such a delicious breakfast and brunch, or even dinner recipe.

It is the perfect and most satisfying meal to be enjoyed at any time. This frittata recipe came together during RUSH HOUR. If you’re wondering what I mean–here is the long and short of the story.

I had just left a dental appointment that ran a little longer than expected. So I needed to come up with a super easy and quick dish for my pending and regular lunch date with my sister and any other family members. So I needed simple ingredients and a thirty minute recipe while racing through the aisles of the grocery store.

Also, there was absolutely no time to search the Food Network recipe index or even stream food icon, Rachel Ray’s telecast 30 MINUTE MEALS.

So being it was Thursday and our normal routine weekly lunch date–as well as a day where I normally have the opportunity to either put my recipe development skills to task or simply opt to make something familiar. Well, the first option is what I did. MISSION ACCOMPLISHED!

I’m happy to say that though my sister Angela is not so much picky about the type of dish (be it chicken, beef, or seafood), she is where the ingredients used are concerned. An example of this, is mayonnaise or other creamy white condiments. Well she has a fetish or better yet phobia where these type of ingredients are concerned.

Trust me when I say, I usually have my work cut out for me. However, for this particular breakfast-for-lunch or brunch recipe–my Bake Summer Sausage, Spinach, and Gouda Pasta Frittata, this 30 minute recipe I masterfully created was a hit with Angela as well as my entire family, and I’m sure it will be with yours as well.

Baked Garlic Summer Sausage, Spinach, Gouda Pasta Frittata

Easy and Quick Breakfast, Brunch or Dinner Frittata with healthy whole grain Brown Rice Pasta.

Ingredients

  • 1 roll or 8 ounces Uncured Garlic Summer Sausage sliced or chopped, casing removed
  • 3 cups Fresh Baby Spinach
  • 16 ounces Gouda Cheese shredded
  • 12 Ounces Whole Grain Brown Rice Pasta
  • 3 tsp Eggs
  • 1/2 cup Milk or Heavy Cream
  • 1/2 cup Bone or Beef Broth
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp Adobo All Purpose Seasoning
  • 1 tbsp Butter

Instructions

  1. Preheat oven at 350.

  2. In a large pot, boil water and cook pasta until al dente (left with a little bite or chew to it).

  3. In a large bowl, combine eggs, broth, milk, spinach and 1/4 cup cheese. Season with salt and pepper.

  4. In a medium or large saute pan, melt butter.

  5. Add cooked pasta. Make a slight indentation in the center of the noodles.

  6. Pour the egg, sausage, spinach and cheese mixture over the top of the pasta.

  7. Usually a large spoon or spatula, spread the mixture evenly to cover the entire noodles. Let the pasta and egg mixture cook on medium heat for a few minutes until just set around the edges.

  8. Sprinkle with the remaining cheese.

  9. Bake for 15 minutes until set. Allow it the pasta frittata to cool for 5 minutes and enjoy!
