I decided to take my bunch of plantains and use this “banana looking” superfood to create a variety of foods. Plantains, however, are a lot less sweet than bananas, but they are also rich in minerals such as potassium and magnesium as well as in antioxidants such as Vitamins A, B6, C and fiber. Sausage, Plantain, and Veggie Spanish Flatbread Pizza
Ingredients
- Ground Chorizo Sausage, 1 pound
- 2 Plantains, sliced
- 1/4 cup cornstarch (more if needed) for coating plantains
- Olive or Canola Oil, 3 tablespoons (for frying plantains; more if needed)
- Red Onions, 1/2 cup sliced
- Red Pepper, 1/2 cup diced
- Cabbage, 2 cups shredded (optional)
- Cayenne Pepper, 1/2 teaspoon
- Garlic Powder, 1/2 teaspoon
- Adobo seasoning, 1 teaspoon
- Salt, 1/4 teaspoon
- Black Pepper, couple dashes
- Lime Juice, 1/8 cup
- Shredded Cheddar Cheese
- 2 FlatOut Thin Pizza Crusts
Instructions
- In a skillet, brown chorizo sausage.
- Remove cooked sausage from skillet and add 1 tablespoon of oil to the pan.
- Sautee onions and peppers until tender.
- Add the cabbage and lime juice to the pan and continue to cook until tender.
- Combine the browned sausage with the cooked veggies and remove from heat.
- In another pan, fry the sliced plantains after coating them with the cornstarch in 2 tablespoons or more of olive or canola oil until golden brown.
- Blot any excess oil on a paper towel.
- First, layer the meat mixture on top of the flatbread crust.
- Next top with the crispy plantain slices, and then follow with the cheese.
- Bake in a preheated oven at 350 for 5 minutes or until cheese has melted.
