This is a tasty and simple way to use up those ripe mango’s before they spoil. Much like bananas you can also make a delicious mango bread. However, I decided to make this no-nonsense mango jelly instead and it’s as delicious as any other.

Delicious Mango Jelly

This mango fruit jelly really needed nothing at all to spruce it up, though I added only two ingredients which made it even better. Of course, it’s totally optional. However, I don’t recommend skipping the two special ingredients I used as this mango jelly is so good and the flavors much more enhanced too that it will become a favorite breakfast spread on warm buttered toast or on top of plain Greek yogurt. You decide.

Lastly, because I’m primarily following a sugar-free and keto/low carb diet, this recipe is sugar-free. However, simply adapt the sweeteners in this very basic recipe (if using) to suit your own preferences.

MAKE THE RECIPE

Easy Mango Jelly

A no nonsense mango jelly recipe where only two ingredients are add to enhance the flavor all the more.

Ingredients

  • 3 ripe Mangoes
  • 1 tbsp ZERO Sugar Honey (or regular honey or your choice), optional
  • 1 tbsp Swerve Light Brown Sweetener (or regular brown sugar if preferred), optional

Instructions

  1. Remove the pits from the mango fruit. Try to remove as much of the flesh or meat from the mango fruit as possible, using a razor or knife to shave off the mango pit.

  2. Next, add it to small pan on the stovetop, set on medium high.

  3. Add and stir in the sweetener (or sugar) and the honey.

  4. Allow the mangos to cook in their juices. It will thicken. Using a potato masher, work out any large chunks. Cook for 5-7 minutes while stirring.

  5. Once the mango jelly has thickened, remove it from the heat and allow it to cool before storing it in a small jar and then refrigerate.
