Many of my easy or even moderately complicated recipes have come from the family meals that I’ve prepared for my hungry siblings or for my curious coworkers who are also my taste testers.

This straight forward chicken dish was a quick thought for a pending lunch date in less than an hour with my sister, plus I was not feeling tip-top but I gotta ‘er done. ☺️ So, there’s nothing difficult about whipping up this simple recipe like I did—these saucy and cheesy little chicken bites—my tasty Italian Chicken Hot Pastry Pockets.

Italian Chicken Hot Pastry Pockets

Italian seasoned chicken, marinara and mozzarella cheese wrapped in a flaky pastry.

Ingredients

  • 1 Puffed Pastry Sheet cut enough for 8 chicken pieces
  • 2 Chicken Breasts cut into 4 small pieces
  • Primal Kitchen Marinara Sauce or your choice
  • Mozzarella Cheese shredded
  • 1 tbsp Oregano Spice for both sides of chicken
  • 1 tbsp Basil Spice for both sides of chicken
  • 1 /2 tbsp Garlic Powder for both sides of chicken
  • 1 tsp Salt for both sides of chicken
  • 1/2 tsp Black Pepper for both sides of chicken
  • Olive Oil for drizzling over chicken

Instructions

  1. Preheat oven to 350 degrees.

  2. Cut each chicken breast into 4 pieces and season both sides with oregano, basil, garlic, salt and pepper.

  3. Bake seasoned chicken for 15 minutes.

  4. Roll out pastry sheet and cut into 8 pieces (rectangles).

  5. Dot with a half tablespoon of marinara, then chicken piece, more marinara and cheese.

  6. Wrap the dough around the chicken, using water if necessary, to help seal.

  7. Place pastry wrap on a nonstick or parchment lined sheet pan with seam side down.

  8. Return pan back to oven and bake for 20 minutes or until pastry puffs and is golden brown.
