Turkey Bacon Strawberry and Maple Jam Puffed Pastry Boats

This is BOTH a savory and sweet appetizer or anytizer  that comes straight from my food laboratory. It is meaty—and chocked full of turkey pieces (or pork bacon if you prefer). This, according to my taste testers had a “unique” flavor with the sweetness of honey, maple syrup, and strawberry jam combined with the acidity of balsamic and apple vinegars and a squeeze of lemon. There is not much more to say on this recipe except that it definitely PASSED the test under the classification of ‘extraordinarily delicious.’ So go ahead and give it a try. Ingredients

  • 1/2 pound Turkey Bacon or Pork if preferred
  • 2-3 tablespoons Olive Oil
  • 1/2 cup Red Onion, diced
  • 2 large Garlic cloves, minced
  • 3 tablespoons Organic Honey
  • 3 tbsp Organic Maple Syrup
  • 3 tablespoon Balsamic Vinegar
  • 2 tablespoons Fish Sauce
  • 1/4 cup Strawberry jam, organic
  • 1/4 cup Apple Cider Vinegar, organic
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • Juice from 1/2 Organic Lemon

Directions

  1.  Add oil to saucepan, and fry turkey pieces until just lightly browned.
  2. When cooled, cut bacon into small pieces. Reserve two tablespoons of oil, to saute the onions and garlic till slightly tender.
  3. Add the honey, syrup, balsamic vinegar, fish sauce, apple cider vinegar, salt, pepper, and pre-cooked bacon to the pan.
  4. Allow the mixture to cook on medium high heat for 5 minutes thicken—stirring regularly. Turn down heat and allow bacon mixture to simmer for an additional 3 minutes.
  5.  Stir in juice from half a lemon to the turkey mixture, before topping it on either a store brought or home made puffed pastry dough.
  6.  Bake in a preheated oven at 400 degrees for 20 minutes, setting the oven to broiler last 5 minutes until the pastry boats are golden brown. Note: Tent the filling with a tiny piece of foil if necessary to keep it from over browning.

Easy Home-Made Puffed Pastry Dough

Though home-made flaky Puffed Pastry, can be quite daunting, not this simple recipe below. However, it is much more easier and less time consuming to simply buy store brought, ready made dough from the refrigerator section of  your grocer’s.

Easy Home-Made Puffed Pastry Dough

Prep Time 5 minutes

Ingredients

  • 2 cups All Purpose Flour unbleached
  • 1/2 tsp Salt
  • 6 tbsp Unsalted Butter organic
  • 5 oz cold water

Instructions

  1. Combine flour and salt in a bowl. Use your hands to gently mix together.

  2. Add cut pieces of butter to flour, pinching with fingers to form crumbs. However, be careful not to over mix, or over handle the dough.

  3. Add cold water and lemon juice and use fists to gently mash and work to combine and form a sticky dough.

  4. Lightly flour board and roll out dough into a large rectangle. Cut dough into small squares. Next, take each corner, and pinch together at each end in order to form a boat shape for the turkey bacon filling.

Recipe Notes

You can use your creative juices anyway you prefer, when working with this puffed pastry dough to form any shape of your own choosing. Just be sure to have FUN in the process.
