Made these crunchy and tasty Mediterranean Tomato Chips to dip into my Mediterranean Hummus along with a Mediterranean Chicken Sandwich which was today’s dinner theme. Anyway more in subsequent posts on the recipes for my Mediterranean Grilled Chicken Sandwich and my Kalamata Seasoned Hummus drizzled with Greek olive oil.

RECIPE SHORTCUT

Step 1: Cut tortillas into triangles or squares Top with mozzarella.
Step 2: Top mozzarella with a tomato slice.
Step 3: Bake Tomato Chips for 7 minutes.

Cheesy Tomato Chips: Mediterranean Style

Tomato and cheese tortilla chips seasoned with Greek dressing and topped with feta cheese.

Ingredients

  • 1 Roma Tomato 8 slices
  • 1 oz Mozzarella cheese shredded
  • 1 Hero Tortilla or other Cut up in triangles, squares..
  • 1 /2 tsp Primal Kitchen Greek Vinaigrette Baste each tomato with.
  • Salt sprinkled on tomato
  • Black Pepper sprinkled on tomato
  • Feta Cheese Over top of chips
  • Parmesan Cheese sprinkled on top of chips.

Instructions

  1. Slice one tortilla into triangles or squares or in pieces to accommodate a tomato slice.

  2. Sprinkle the tops of tortillas with a pinch of mozzarella.

  3. Top each chip with one tomato slice.

  4. Baste the tomato slice and around the chip with the Greek marinade.

  5. Sprinkle with a pinch of salt and pepper.

  6. Top with a spoon of Parmesan and feta cheeses.

  7. Bake for 7 minutes until edges are crisp and lightly browned.
