Cheesy Tomato Chips: Mediterranean Style

Tomato and cheese tortilla chips seasoned with Greek dressing and topped with feta cheese.

Ingredients

  • 1 Roma Tomato 8 slices
  • 1 oz Mozzarella cheese shredded
  • 1 Hero Tortilla or other Cut up in triangles, squares..
  • 1 /2 tsp Primal Kitchen Greek Vinaigrette Baste each tomato with.
  • Salt sprinkled on tomato
  • Black Pepper sprinkled on tomato
  • Feta Cheese Over top of chips
  • Parmesan Cheese sprinkled on top of chips.

Instructions

  1. Slice one tortilla into triangles or squares or in pieces to accommodate a tomato slice.

  2. Sprinkle the tops of tortillas with a pinch of mozzarella.

  3. Top each chip with one tomato slice.

  4. Baste the tomato slice and around the chip with the Greek marinade.

  5. Sprinkle with a pinch of salt and pepper.

  6. Top with a spoon of Parmesan and feta cheeses.

  7. Bake for 7 minutes until edges are crisp and lightly browned.
