Who would have thought that sweet plantain chips and creamy peanut butter would make such a delicious cookie.
Well, my Sweet Plantain Peanut Butter Cookies, though slightly unusual, are amazingly scrumptious.

What makes these cookies so special is not only its crunch and not unlike any other cookie where potato chips have been added.
However, the BIGGER bite from these plantain strips (or chips) adds even more texture and bite to an already crispy cookie.
The extra sweetness from the plantains adds even more deliciousness especially when combined with an already amazing ingredient —peanut butter— making this one extraordinary cookie.


RECIPE

Sugar Free, Crispy Sweet Plantain Peanut Butter 🧑🍳
Crispy plantain strips meet creamy peanut butter to make for one uniquely delicious and textured cookie.
Ingredients
- 1-1/2 cups Oat flour
- 3/4 cup Light Brown Sugar Swerve Brand or other sugar free
- 1/2 cup Creamy Peanut Butter
- 1/2 cup Plantain Strips (or Chips) by Artisan Tropic or other crushed
- 4 tbsp Butter melted
Instructions

Preheat oven at 350 degrees.

In a medium bowl, combine both the flour and sugar together.

Stir in the crushed plantains.

Next add in the peanut butter, stirring to combine. NOTE: The cookie dough will appear crumbly.

Pour the melted butter into the bowl and throughly mix all of the ingredients together, insuring that all of the flour is coated. NOTE: The dough will be pinch able and easy to shape into cookies.

Take some of the dough. Roll, press and shape dough into 8 cookie rounds, placing them on a parchment lined cookie or baking sheet.

Bake for 15 minutes until edges and tops are lightly browned. NOTE: The cookies will become crispy upon cooling. For a chewer cookie, simply add in one egg white.
