This Strawberry Shortbread Cookie Treat came by quite accidentally but believe me when I say it is absolutely delicious. So I’m going to give you the low down on how I pieced together this special strawberry cookie dessert.

Strawberry Shortbread Cookie Dessert

I was in the process of making my famous shortbread cookies for my young nieces and nephews when I discovered I was out of all purpose flour. So, instead of running to the grocery store, I decided to use cake flour to fill the bill.

However, the result of using cake flour instead of all purpose yielded a different outcome. The cookies were thinner, softer and tender with crispy edges (see photo below).

Basically, they were not what I expected but neither was this spontaneous tasty recipe treat that developed as a result.

So the long and short of is this brief recipe post, is that I’m glad I improvised and it’s okay to do so. Choose not to see failure but rather see an opportunity to reinvent or recreate.

Instead of scrapping this batch altogether and starting all over again, I chose to repurpose them into a different recipe and the result—this easy strawberry cookie dessert. After all, as that familiar saying goes, “When life throws or hands you lemons, then make lemonade” and that’s precisely what I did here —but without the lemons of course. 🙂

Top with whipped cream to make this even more delectable.

Strawberry Shortbread Cookie Treat

A play off of the famous Strawberry Shortcake using shortbread cookies instead of cake. Lightly sweetened thin shortbread cookies and glazed strawberries. Be sure to top with fluffy whipped cream.

Ingredients

  • 2 sticks Butter unsalted
  • 1 cup Sugar
  • 2 cups Cake Flour
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 cup Fresh Strawberries
  • 6 tbsp Strawberry Preserves

Instructions

For the cookies

  1. In a bowl with an electric mixer, cream butter and sugar together.

  2. In another bowl, whisk the flour and salt together.

  3. Gradually add the flour to the sugar and butter mixture until thoroughly combined.

  4. Lightly flour a surface and pour crumbly dough pieces on. Carefully work and form cookie dough into a circular disc.

  5. Refrigerate for at least 1 hour.

  6. On a nonstick or parchment lined baking sheet , form chilled dough into 12 cookies.

  7. Bake for 10 to 12 minute until lightly browned on edges.

For the strawberries

  1. Slice 1 cup of strawberries in half.

  2. Add 3 tablespoons of strawberry preserves to the strawberries and warm in microwave for 45 seconds.

  3. Stir to thoroughly coat the strawberries with the melted preserves.

  4. In a small microwaveable bowl, melt the remaining strawberry preserves for 45 sec or until melted. Drizzle over the cookies and strawberries. Top with whipped cream and Enjoy!
