I made this originally ingredient by ingredient months ago after jotting down the precise recipe while watching her popular telecast “Martha Bakes.” However, since starting a sugar free, low carb and keto diet for weight loss as well as for health purposes, I now modify and adapt ingredients and most of my recipes (however, still organic) to suit my relatively new lifestyle of which I have done here.

Ingredients

For the Crust

  • 1 cup Oat Flour
  • 1/2 cup Almond Flour
  • 1/2 tsp Kosher Salt
  • 1-1/2 sticks Butter, unsalted
  • 1/4 cup Erythritol, Monk Fruit or Allulose granulated
  • 1 tsp Vanilla Extract

For the Filling

  • 1 cup Spelt Flour
  • 1/2 cup Coconut Flour
  • 1 cup Erythritol, Monk Fruit, or Allulose granulated
  • 1/4 cup Swerve or Besti Dark Brown Sugar by Wholesome Yum
  • 1 tbsp Wholesome Yum Keto Pancake Mix
  • 2 Eggs plus 1 egg yolk
  • 1/2 stick Butter unsalted and melted

Instructions

For pre-baking the crust

  1. Combine flour, salt, sugar, vanilla in a bowl.

  2. Pour in melted butter and combine till dough resembles coarse crumbs.

  3. Place and press into a buttered tart or cake pan lined with buttered parchment paper. Refrigerate for at least 15-20 minutes.

  4. Blind bake the refrigerated crust for 10 minutes or until set or lightly browned. Use pie weights to keep the crust from shrinking to much.

  5. Let the crust cool completely before adding the filling and returning back to the oven.

For the Filling

  1. In a bowl, whip together the 2 eggs and the yolk.

  2. Next add in both the white and dark sugars, salt, vanilla and keto pancake mix, stirring to combine.

  3. Finish by pouring in 1 stick of cooled, melted butter–stirring to combine.

  4. Pour the filling into the tart pan and bake at 350 degrees for 35 minutes.
