Make this Speedy Sweet: Almond Flour Chocolate Lava Mug Cake

Who doesn’t have a sweet tooth every now and then and therefore get in the mood for or even crave a big piece of cake—whether chocolate, vanilla, or carrot–you name it? However, there are also times when we just don’t feel like baking and entire cake and especially with the amount of time it takes. Well, this definitely sounds a lot like me at times, even though I absolutely enjoy baking sweet delicacies. Sometimes I really just prefer a speedy sweet and one that’s not time consuming and that I can literally prepare and enjoy in only a few minutes. So, with Valentine’s Day in another few weeks, I wanted to share over the next few posts, a few ideas for speedy sweets that can be enjoyed quickly.

What would you say to “mug cakes” as they bake in just little over a minute and without even turning on your oven or the cleanup that follows. Plus, these special cakes can be prepared in a variety of flavors, and they are just as delicious prepared easily as single and/or double servings—that is, one for you and one for your sweetheart.

Anyway, I wanted to make this recipe dessert sugar free (i.e. without refined white sugar and processed flour), therefore, a sugar free sweetener, almond flour and unsweetened almond milk was used instead being I am watching my carbs. However, this super simple recipe will work well with white refined sugar and any kind of flour of your choosing, as well as whole fat organic milk or buttermilk if preferred.

So, more about the cake. Today’s mug cake recipe is a melty, molten chocolate lava mug cake where the meltiness of the chocolate is created by inserting them in the batter center after nuking. I used some of the most delicious non-guilty pleasure, keto-friendly and sugar-free dark chocolate pieces by Goalz.

I microwaved the cake in a medium sized mug and of which it is intended to be eaten from. However, I turned the mug cake out on a saucer of which I’ve included a photo here for visual presentation only to show how the mug cake baked. However, I prefer not making any more unnecessary dishes and if you too are anything like me about busting suds, just top it and eat it straight out of the mug. After all, it is a mug cake! 😉

Almond Flour Chocolate Lava Mug Cake

Speedy and easy chocolate molten lava cake ready in less than a minute.

Ingredients

  • 2 tbsp Almond Flour
  • 1 tbsp Coconut Flour
  • 1 tbsp Dutch Processed Cocoa
  • 3 tbsp Swerve Granulated Sugar or Besti's Monk and Allulose Granulated Blend
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • Pinch of Salt
  • 2 large Eggs
  • 3 tbsp Almond Milk unsweetened
  • 1 tsp Vanilla extract or 3 drops of Vanilla Creme Stevia
  • 1 tbsp Unsalted Butter melted
  • 2 pieces Goalz Dark Chocolate Pieces or your choice

Instructions

  1. In a food processor or by hand, combine and pulse or whisk the dry ingredients.

  2. Add in the beaten egg, milk, vanilla, and cooled melted butter and blend until combined.

  3. Pour batter into a 10 to 12-ounce mug. Then insert 2 chocolate pieces into the center of the batter and proceed to microwave for 70 to 75 seconds. Note: Some microwaves may require longer depending on its voltage.

  4. Remove cooked mug cake from microwave and allow it to cool before topping with powdered sugar or whipped cream (optional).
