The yearly Strawberry Festival here in Florida is just about ready to commence, however, I just couldn’t wait to make my own brand of shortcake using these flaky pastries—croissants. So here are my Sugar Free Strawberry and Cream Cheese Shortcake Croissants.

Sugar Free Strawberry and Cream Cheese Shortcake Croissants

With spring in the air and this being fruit season, I am looking forward to making many more delectable sweets and delicious recipes like this one— as I allow my imagination to simply run wild in creating what I hope to be foods that are appealing both visually to the eyes but more importantly the taste buds and of course always “organically healthy.”

Sugar Free Strawberry and Cream Cheese Shortcake Croissants

A delicious play on the popular Strawberry Shortcake using the croissant pastry. Plus, this particular recipe is sugar free. However, you can make this with sugar if preferred.

Ingredients

  • 3 large Hero Croissants or other

For strawberry sauce

  • Fresh Strawberries
  • 1 tbsp Butter unsalted
  • 1 heaping tbsp Strawberry Preserves
  • 1/4 cup Allulose, sugar or other
  • Pinch Salt

For cream cheese spread

  • 4 oz Cream Cheese softened for spreading
  • 2 tbsp Besti Powdered Sugar
  • Splash Vanilla Extract

For the whipped crean

  • 1/4 cup Heavy Cream
  • 2 tbsp Besti Powdered Sugar or other
  • Splash Vanilla Extract

Instructions

For the strawberry sauce

  1. Remove hulls from strawberries and cut the strawberries in half, preserving a few for garnishing.

  2. Add butter to a pan on the stove on medium heat. Allow butter to melt and add in the strawberries and sweetener.

  3. Allow strawberries to cook until softened and a thick sauce forms from the cooked berries. Set aside and allow sauce to cool.

For the croissants

  1. Meanwhile in a preheated oven at 350 degrees, toast and warm the croissants for 5 minutes. Remove from heat and partially slice the croissants in half.

For the cream cheese spread

  1. In a mixing bowl, blend together the cream cheese, powdered sugar and vanilla until mixture is smooth.

For the whipped cream

  1. In a chilled bowl, using a hand mixer whip the heavy cream until it starts to thicken slightly. Then add the powdered sugar and vanilla. Continue mixing on high speed until stiff peaks form.

Assembly of Croissant Shortcake

  1. Spread cream cheese on lower lid of split croissants.

  2. Next, top the cream cheese with the strawberry sauce.

  3. Close croissant tops and garnish with a dollop of whipped cream and strawberries.

  4. Drizzle any remaining strawberry sauce over the croissants and enjoy!
