Who doesn’t love a good or even great salad especially when it’s simple plus delicious. Well I do! That’s what we have here. It’s a basic but an eye-catching salad.

When I say basic, it is only in the sense there are only a few simple ingredients —spinach and baby lettuce, tomatoes, cucumber—with the exception of one.

Shopping earlier I came across one item at Sprouts that immediately caught my eye even then. The photo is immediately down below.

As you can see from the photo, it’s simply a mozzarella cheese stick with uncured Genoa salami, but it really jazzed up this salad in not just appearance but in taste. So, both my eyes and mouth were both satisfied.

Now if you can’t find this brand you know exactly what to do. Shop for those two specific ingredients and get to wrapping. Genoa Salami and Cheese Spinach Lettuce Salad with Balsamic Vinaigrette

Ingredients

For the salad

  • 3 cups Sprouts 50/50 Blend Spinach and Baby Lettuce
  • 6 Mozzarella Cheese Sticks
  • 6 slices Genoa Salami uncured
  • 2 Roma Tomatoes wedges
  • 1 English Cucumber sliced on diagonal (optional)
  • Grated Parmesan for sprinkling over salad

For the balsamic vinaigrette

  • 1/8 cup Primal Kitchen Vinaigrette or other
  • 1 tbsp Dijon Mustard
  • 1/2 cup Olive Oil
  • Salt to taste
  • Black Pepper to taste
  • 1 tbsp Lemon Juice

Instructions

For the salad

  1. Roll up the salami and cheese and set aside.

  2. Place spinach lettuce in a bowl.

  3. Top with tomatoes and cucumbers.

  4. Season with salt and pepper.

  5. Finish by placing salami and cheese wraps over salad. Sprinkle with grated Parmesan.

For the balsamic vinaigrette

  1. Add the vinegar, Dijon, lemon juice ,salt, pepper and olive oil in a mason jar and shake, or a blender may be used if preferred.

  2. Lightly drizzle dressing over the salad. Gently toss until lightly coated. Note: Leave any extra dressing in mason jar if more should be needed or for another use.
