Refreshing Antipasto Mixed Salad

Notes
Be careful not to overcook the pasta. Leave a little bit of chew.
Stir and combine gingerly to keep the beans in tact.
Ingredients
- 1 pound or 16 ounces of boiled-cooked Penne Pasta or your choice
- 15 ounce can Great Northern Beans, rinsed
- 15 ounce can Garbanzo Beans, rinsed
- 15 ounce can Sweet Kernel Corn, drained
- 1, 3 ounce can sliced Black Olives, drained
- 4 ounces sliced Summer Sausage, 25 slices
- Pepperoni slices, 50
- Salami slices, 25
- Mozzarella Cheese, julienned, 3/4 cup
- Monterey Jack Cheese, julienned, 3/4 cup
- Cheddar Cheese, julienned, 3/4 cup
- Fresh Basil Dressing:
- 8 ounces Light Olive Oil
- 5 fresh Basil Leaves, chopped, or 3 tablespoons
- 1 tablespoon dried Basil
- 1 tablespoon minced Garlic
- 1 tablespoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 splashes of Red Wine (Red Wine Vinegar is optional for kids)
- Juice from 1 Lemon
- 3 cups fresh Baby Spinach (optional)
Instructions
- In a large bowl, combine beans, corn, olives, meats, and cheeses.
- Lightly add and toss in the cooled, cooked pasta.
- Prepare basil dressing in mason jar or bowl.
- Pour the dressing over the meat, bean, cheese mixture.
- Next, add in the fresh spinach.
- Finally, enjoy this totally refreshing salad immediately or allow it to lightly chill for 30 minutes.
