I owe the inspiration of this post to a Instastory by a talented person on my Instagram feed, the Modern Nonna. She created and baked a love letter using puffed pastry dough with a heart shaped piece of pastry that was cut out and used as its seal and this no doubt was baked in recognition of Valentine’s Day 2024 which is just around the corner. In my mind, it was simply a brilliant idea and super cute.
Furthermore, it is talented foodies and chefs like her and quite a few others, that have really inspired me to be as creative with my own recipes and in preparing organic, healthy, and wholesome foods that are both eye-catching and delicious too. After all, we eat first with our eyes where we are visually enticed with a craving or desire for.
Anyway, with that being said, I’ve discovered just how much fun it is to be in the kitchen where I can feel free to allow my own creative juices to also flow, and so I had fun putting together this super simple recipe which is a play and inspiration off of Nonna’s “Love Letter Pastries”— and that is these Love Letter Pizzas and both just in time to make for Valentines Day.
This love letter pizza here requires only 5 ingredients (sauce, two cheeses, pepperoni, and the tortilla). However, they also can be filled with ingredients of your choice. However, do not overstuff. I recommend using Hero.co brand tortillas for the job as they are large enough and super pliable enough for folding to resemble a “letter” of some sort. But if not, any large flour tortilla will likewise work regardless of the brand.
The inside of this stuffed love letter pizza has marinara for its base, followed by pepperoni and cheese which when lightly buttered will help it to seal both sides and the heart shaped pepperoni piece, giving it more of a romantic touch. Love Letter Pizzas
Love letter stuffed pizza, especially made for Valentine's Day or any other, and filled with pepperoni and cheese, with a heart cut out in the shape of a pepperoni piece to seal.
Ingredients
- 2 Tortilla Wraps by Hero or any other brand
- Primal Kitchen Marinara Sauce Just enough to cover the tortilla center.
- 4 Pepperoni slices, uncured More if you prefer.
- Parmesan cheese, grated For dusting over warm pizza.
- 1 tbsp Unsalted Butter, softened For both the pan and to spread on the tortilla to help seal pepperoni hearts in place.
Instructions

Place a tablespoon of butter in large nonstick frying pan.

Place just enough marinara on tortilla center only.

Top marinara with 4 large pepperoni slices. However, use more if the pepperoni slices are smaller in size.

Sprinkle with shredded mozzarella.

Fold in sides and then bottom to resemble a letter after spreading with a little softened butter. Fold down the top or leave it up.

Cut 2 large pepperoni pieces with a small heart shaped cookie cutter if available. Otherwise, allow the artist in you to emerge to gently carve out the shape of small hearts. Use a dot of butter for the small hearts to stick and help seal both sides.

Add the pizza wrap to the buttered skillet with the folded and single pepperoni side down first. Lightly brown on both sides, ensuring that the cheese has ample time to melt inside, and the ingredients are warmed.
