Hot Dogs Without a Bun? Try these Keto Corn Dog Muffins

If you are like me and enjoy a hot dog every now and then, or at least once a week, don’t let the thought of being Keto or low carb deter you. There are now numerous low carb and keto-friendly options available as well as products on the market today making dieting or living it as a lifestyle possible. You just have to read the labels, but more importantly listen to and read your own body in order to do what’s healthy and good for you.

Before starting a low carb, keto, and sugar-free diet and even with the possibility of making it a permanent lifestyle change, I decided to enlist the invaluable help of others to achieve a certain outcome–that is, to lose weight by making dietary changes, to break free of my own sugar addiction by riding off of their success stories, reveling from their personal experiences, and their wealth of knowledge shared and shining through their recipes.

What their recipes have proven to me is that you can eat better and healthier when you don’t limit your diet to eating only processed and refined foods that may be bad for you. Also, that low carb, sugar-free and/or keto eaters are still able to enjoy some of their favorite foods like pastas, hot dogs, others and not to mention desserts too (e.g. like low carb and sugar-free chocolates at thegoalz.com).

Anyway, I was super thrilled to be able to enjoy something as simple as eating a hotdog though it was without a white bun having made this absolutely flavorful Keto Corn Muffin recipe by Wholesome Yum with a wiener poking out. 🙂 However, don’t sweat the bread, as low carb breads and buns are still readily available by certain food and bread manufacturers like hero.co.

Keto Corn Dog Recipe

Keto friendly mini corn dog recipe that is low carb and though minus the white bun they're blanketed in sweet cornbread making them equally as delicious.

Ingredients

  • 1-2/3 cups Wholesome Yum Almond Flour or brand of choice
  • 1 tsp Baking Powder
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 1/4 tsp Sea Salt
  • 3-1/2 tbsp Unsalted Butter melted, plus more for greasing
  • 3-1/2 tbsp Unsweetened Almond Milk
  • 2 Eggs large
  • 1 tsp Sweet Corn Extract
  • 4 Hot Dogs

Instructions

  1. Preheat oven to 400 degrees.

  2. Line mini or even regular muffin tins with cupcake liners.

For the cornbread batter

  1. In a large bowl, stir together the flour, baking powder, sweetener, and sea salt.

  2. Stir in the melted butter, almond milk and eggs, until smooth. Stir in the sweet corn extract.

  3. Transfer the batter evenly into the lined muffin pan, filling each about 2/3 full.

  4. Cut each hot dog into pieces and insert hot dogs into the center of each muffin.

  5. Bake for 12 to 14 minutes until the top is golden brown.

Recipe Notes

I used my regular muffin pan and halved the hot dogs and it made about 12 using 8 hot dogs.

Whenever possible, choose organic and uncured, nitrate, nitrite free hot dogs.
