Healthy, Chunky Sugar Free Apple Fritters

Deliciously healthy Apple Fritter recipe loaded and chocked full of chunky apple pieces, sweetened with sugar-free light brown sugar and warm spices and coated with a sugar free vanilla glaze.

Ingredients

  • 1-1/4 cups Oat Flour
  • 1/4 cup Light Brown Sugar Swerve Sugar Substitute
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 cup Whole Milk organic
  • 2 Large Eggs
  • 1 /2 tsp Vanilla Extract
  • 3 regular sized Apples organic
  • 1-1/2 to 2 inches Avocado, Olive Oil or Canola Oil For Frying

Instructions

For the apple fritters

  1. Whisk flour, sugar, salt and spices together.

  2. Create a well in the flour mixture and add milk, whisked eggs, and vanilla. Gently stir to combine all ingredients until incorporated. Do not over mix.

  3. Heat oil in a large pan or Dutch oven until it is at 375 and no less than 350 degrees. Verify temperature with a candy or other kitchen thermometer.

  4. Peel, core and dice apples. Gently fold the apples into the fritter batter.

  5. Carefully add and drop the fritter batter using a 1/4 cup measurer into the hot oil. Gently move fritter around initially to allow batter to spread just a bit.

  6. Deep fry on both sides for at least 2 to 3 minutes and/or until golden brown.

  7. Drain fritters on a dish lined with paper towels.

For the vanilla glaze

  1. Mix to the powdered sugar, milk and vanilla.

  2. Swirl slightly cooled fritters around in glaze, coating both sides.

  3. Place fritters on a wire rack with a baking sheet beneath to catch the drippings and any excess glaze.
