Deliciously healthy Apple Fritter recipe loaded and chocked full of chunky apple pieces, sweetened with sugar-free light brown sugar and warm spices and coated with a sugar free vanilla glaze.
Whisk flour, sugar, salt and spices together.
Create a well in the flour mixture and add milk, whisked eggs, and vanilla. Gently stir to combine all ingredients until incorporated. Do not over mix.
Heat oil in a large pan or Dutch oven until it is at 375 and no less than 350 degrees. Verify temperature with a candy or other kitchen thermometer.
Peel, core and dice apples. Gently fold the apples into the fritter batter.
Carefully add and drop the fritter batter using a 1/4 cup measurer into the hot oil. Gently move fritter around initially to allow batter to spread just a bit.
Deep fry on both sides for at least 2 to 3 minutes and/or until golden brown.
Drain fritters on a dish lined with paper towels.
Mix to the powdered sugar, milk and vanilla.
Swirl slightly cooled fritters around in glaze, coating both sides.
Place fritters on a wire rack with a baking sheet beneath to catch the drippings and any excess glaze.
