These make-ahead low carb strawberry fruit bars can be baked up ahead of the work week, especially if you are someone accustomed to meal prepping before a hectic and busy schedule ahead and/or for a long list of after school activities with the kids long before dinner time.


While this recipe calls for using fresh strawberries, dehydrated berries can also be used instead. Though the saying “fresh is best” rings with absolute truth, however, in this particular instance dehydrated berries might prove to be more chewy in this recipe and even offer more longevity inside and outside of the fridge than the fresh fruit strawberries used here. Nevertheless, I’m confident these yummy fresh fruit bars won’t last long—as they didn’t at my home.

Low Carb Strawberry Oat Bars

In either case, no matter how you make them or bake them, these Fresh Strawberry Oat Bars are meant for you to have something organically healthy and deliciously satisfying for you and your family to be able to just “grab and go“ on those oftentimes very busy mornings.

Low Calorie Strawberry Oat Bars

Ingredients

  • 1 cup Almond Flour
  • 1/2 cup Coconut Flour
  • 1 cup Oats
  • 1 /2 tsp Salt
  • 3 tbsp ZERO Honey or other
  • 1 cup ZERO Sugar Maple Syrup or other
  • 1 pound Fresh Strawberries Dried/dehydrated would also work.
  • 2 tbsp Strawberry Preserves

Instructions

  1. Preheat oven at 350 degrees.

  2. Whisk together both flours, oats and salt.

  3. Add in the remaining ingredients (honey and maple syrup), except for the strawberries. Mix well, combining all of the ingredients together. Note: The mix will become sticky and crumbly. Test by pinching.

  4. Next, gently stir in the strawberries so that the fruit is visible throughout the mixture.

  5. Add the mix into a buttered 8×8 dish. Patting down the mixture by hand, spread and cover the entire pan.

  6. Bake at 350 degrees for 45 minutes.

  7. Drizzle with warmed strawberry preserves. Allow it to cool. Then refrigerate to allow the fruit bars to firmly set before cutting them into squares.

  8. Cut into 8 squares and enjoy these at home or on the go.
