Let’s Take Time To Better Recognize This Memorial Day

Happy Memorial Day! And many thanks to our brave military who I personally want to acknowledge and honor again this 2018 in this particular post. I am extremely grateful for our men and women in America’s Armed Forces! Likewise, I encourage you, my readers, to take just a moment or two, before you light up the grill in prep for your family social gathering to enjoy delectable foods such as barbecue chicken, burgers, and hot dogs; or even before you make that trek to your local beaches (if the weather permits đŸ˜‰ to take time to reflect this Memorial day, what this special day is all about and to remember those who sacrificially fought to make it all possible.

Let’s all proudly reflect on the loving sacrifices that were made and that still continues to be made by men and women of war, done so out of great love for country and its beloved citizens—and that folks, includes both you and I—that they were willing to give up their precious lives for.

God Bless our military and the U.S.A.

Sadly, with all of the unpatriotic behavior being displayed in America today by many of our NFL players refusing to stand for our national anthem as in times past, as well as others who may be encouraging the continuance of this abnormal disdain for our country and its leadership, let us as ‘true blue’ FREE Americans, refuse to adopt the ill behaviors of these particular individuals. Instead let us continue to PRAY and allow our hearts and conduct to proudly DISPLAY thankfulness to the “God We Trust” as “United We Stand” together to willingly support all those that fight for and defend the U.S.A in times past and present.

Anyway, moving on and now on a FOOD NOTE, I want to share my Easy Tater Tot Casserole with you for this Memorial day or as the perfect side dish for any meal.

Easy Tater Tot Casserole

Crispy and Creamy...plus a whole lot more in this "taste-easy" cheesey potato tater tot casserole!

Ingredients

  • 1 pound (bag) Onion Tater Tots (or regular if preferred)
  • 16 oz Sour Cream (of choice) plus more if needed
  • 1 tbsp Lime Juice
  • 1 tbsp Sriracha Hot Sauce more or less to taste
  • Salt and Pepper, to taste
  • 1 cup Chives chopped
  • 1 16 oz bag Triple Cheddar Cheese shredded, some for topping
  • Bacon bits fried or artificial, your choice

Instructions

  1. Combine the sour cream, lime juice, sriracha, salt and pepper, chives, and cheese in large bowl.

  2. Gently fold in slightly defrosted tater tots into the above mixture.

  3. Add the tater tots into a greased 9x11 baking or casserole dish.

  4. Sprinkle with the remaining 1/2 cup cheese, and bake at 400 degrees for 30 minutes, until tots are brown and crispy and the cheese is melted.

  5. Sprinkle with fried or baked, crumbled bacon bits (or if preferred use the artificial ones).

Recipe Notes

Always, look for "organic" ingredients whenever possible and your budget allows.

This is a crispy and creamy recipe using one of our favorite potato friends (other than the French fry) and that is the —the Tater Tot. However, while the potatoes here may have the starring role, a few other ingredients here are BIG time supporters in this casserole dish, and that is tangy sour cream, a twist of lime, and a couple splashes of hot sriracha. So make this in conjunction with your barbecue chicken, meaty burgers, or decorated hot dogs on the grill this Memorial day 2018, as the level of difficulty in making this is—SUPER TAST-EASY!

Enjoy with burgers, hot dogs, chicken… You get to decide!
