There are not to many people on the planet that don’t enjoy this healthy brand of food—fresh cold and warm SALADS.

Therefore, I have prepared a warm and delicious chicken salad recipe for you below that is not only super flavorful as well as equally, if not more so, delicious than that of a traditional cold or room temperature salads, plus, it’s quick and easy to make.

Warm Air Fried Chicken and Veggie Salad

Warm and delicious salad leaves with sautéed vegetables with chunks of crispy air-fried chicken pieces lightly drizzled with a simple balsamic vinaigrette.

Ingredients

  • 1/2 cup Bella or other Mushrooms chopped
  • 1/4 cup Red Onion diced
  • 1 large Tomato diced into large chunks
  • 1 tbsp Olive Oil
  • 1 tbsp Butter unsalted
  • 6 cups Fresh Attitude Spring Salad Mix
  • 2 Breasts Just Bare Lightly Breaded Chicken Breast Spicy Fillets or other air fried and cubed
  • 2 slices Jalapeño Cheese torn into pieces

For Balsamic Vinaigrette

  • 2 tbsp Balsamic Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • Salt to taste
  • 1/2 tsp Black Pepper

Instructions

  1. Air fry prepared chicken till done—about 20 minutes. Cool and cut up into large cubes. Set aside.

  2. In a sauté pan, heat up oil and butter.

  3. Add onions and mushrooms and cook to slightly tender.

  4. Reduce heat and add diced tomatoes .

  5. Season with salt and pepper.

  6. Add in salad mix and cooked chicken and allow to warm for a couple minutes. Remove from heat.

  7. Drizzle on a few tablespoons of the vinaigrette over the warm salad. Gently toss.

  8. Add torn pieces of jalapeño slice cheese. Place the lid back on to allow cheese to melt. Enjoy!
