I have been making these chewy and chocolatey stovetop cookie batter truffles for over two years now. However, today I decided to make and form my truffle dough—this particular batch being sugar free—into miniature footballs especially with Superbowl LVIII forthcoming and in less than two weeks.

Now let me start off by saying, please don’t mind my piping skills here or the lack thereof, as depicted in the photo below, as I am currently working on my piping skills in hopes of getting significantly better. To my credit, I am planning to take an affordable online course with a London expert in the cake baking field, Rosalind Miller Cakes.

So, though my food photography in these particular photos with the obvious piping imperfections, may make them appear only somewhat desirable—the truffle is absolutely delectable—chewy on the inside and wrapped in a dark chocolate shell, make these truffles a foodie’s delight. So, it is for this reason, that I decided to still post both this amazing recipe along with my not so perfect food photos. Also, and in quite possibly another week and for Superbowl Sunday, a do-over and with better photos forthcoming. Anyway, we shall, see? If so, I will post them here with an addendum.

Chewy Chocolatey Football Shaped Truffles

The take home message from this post is to make sure you have all of your necessary tools and ingredients in the kitchen when preparing for any dish, in order to increase your chances of success, though one can always improvise of course. However, I, in this particular case, was ill-prepared as I did not have a fine piping tip on hand to turn these photos into the visually enticing food porn that foodies are accustomed to—as we eat first with our eyes.

However, don’t let that stop you from making my deliciously chewy and chocolatey truffle mini footballs for either this upcoming 2014 Superbowl, or routine game day event, as you can always correct my obvious defect by making sure you have a narrow piping tip to decorate and make clean and neat fine lines.

Either way you will enjoy this bite size dessert recipe, as so many of my own family, friends and coworkers already have. These stovetop chocolate truffles can be rolled into round balls (which is usually how I shape them normally) or even shaped or cut into small hearts for Valentine’s Day, then dipped into melted dark, milk or white chocolate, and enjoyed as is or garnished with sprinkles or any type of chopped nuts. Chewy and Chocolatey Stovetop Sugar Free Mini Football Truffles

Stovetop sugar free truffle cookie dough recipe of my chewy and chocolicious dessert truffles that are shaped into footballs.

Ingredients

  • 3/4 cup Oat Flour or any type of flour of choice.
  • 2 tbsp Coconut Oil or unsalted butter if preferred.
  • 1/4 cup Dutch processed Cocoa or regular Cocoa powder
  • 1/2 cup +1 tbsp Swerve Granulated Sweetener or Besti Monk Fruit and Allulose Blend, granulated
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Almond Milk
  • 1/4 cup Melted Dark Chocolate, or milk chocolate if preferred.

For the icing or glaze

  • 1 tbsp Almond Milk or coconut milk if preferred.
  • 1-1/2 cups Swerve Confectioner Sugar More or less may be needed depending on the consistency of the glaze for piping.

Instructions

  1. Melt coconut oil in a pan on stovetop.

  2. Add in the flour and whisk and cook for 2-3 minutes.

  3. Pour in the milk and continue whisking.

  4. Next add in the cocoa, sweetener and the vanilla, and begin to now stir in with a spoon as a chocolate cookie dough form.

  5. Immediately remove from heat and allow the truffle dough to cool for 5 to 10 minutes.

  6. Finally, roll into balls and work to shape dough into the shape of a football and refrigerate for 10 minutes.

  7. Meanwhile, melt chocolate in the microwave or stovetop, stirring periodically.

  8. Roll the firmed-up chocolate football dough into the melted chocolate, after which refrigerate once again for another 10-15 minutes while you prepare the glaze.

For the white icing or glaze

  1. In a bowl, whisk together the milk and sugar until you obtain a pipeable consistency, adding more sugar or milk as needed to thicken or thin out the glaze.

  2. Using a narrow piping tip, pipe fine lines resembling that of a football on the truffles. Refrigerate for at least 5 minutes to allow the glaze to firm up and set. Then simply enjoy these chewy treats!
