Chewy and Chocolatey Stovetop Sugar Free Mini Football Truffles

Stovetop sugar free truffle cookie dough recipe of my chewy and chocolicious dessert truffles that are shaped into footballs.

Ingredients

  • 3/4 cup Oat Flour or any type of flour of choice.
  • 2 tbsp Coconut Oil or unsalted butter if preferred.
  • 1/4 cup Dutch processed Cocoa or regular Cocoa powder
  • 1/2 cup +1 tbsp Swerve Granulated Sweetener or Besti Monk Fruit and Allulose Blend, granulated
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Almond Milk
  • 1/4 cup Melted Dark Chocolate, or milk chocolate if preferred.

For the icing or glaze

  • 1 tbsp Almond Milk or coconut milk if preferred.
  • 1-1/2 cups Swerve Confectioner Sugar More or less may be needed depending on the consistency of the glaze for piping.

Instructions

  1. Melt coconut oil in a pan on stovetop.

  2. Add in the flour and whisk and cook for 2-3 minutes.

  3. Pour in the milk and continue whisking.

  4. Next add in the cocoa, sweetener and the vanilla, and begin to now stir in with a spoon as a chocolate cookie dough form.

  5. Immediately remove from heat and allow the truffle dough to cool for 5 to 10 minutes.

  6. Finally, roll into balls and work to shape dough into the shape of a football and refrigerate for 10 minutes.

  7. Meanwhile, melt chocolate in the microwave or stovetop, stirring periodically.

  8. Roll the firmed-up chocolate football dough into the melted chocolate, after which refrigerate once again for another 10-15 minutes while you prepare the glaze.

For the white icing or glaze

  1. In a bowl, whisk together the milk and sugar until you obtain a pipeable consistency, adding more sugar or milk as needed to thicken or thin out the glaze.

  2. Using a narrow piping tip, pipe fine lines resembling that of a football on the truffles. Refrigerate for at least 5 minutes to allow the glaze to firm up and set. Then simply enjoy these chewy treats!
