Broccoli and Asparagus Soup

A deliciously nutritious soup packed with green superfoods and FLAVOR too, as you’ve probably already gaged from the title of this particular recipe. This warming soup is not only great for Winter, but all year round too and enjoyed with your favorite main course (e.g. beef or chicken) or just a simple tasty sandwich will do. I know it is a stable recipe favorite in my quaint, family home, and I’m sure it will become one in yours too!

Ingredients

  • Broccoli Spears, 1 cup
  • Asparagus, sliced, 1 cup
  • Garlic cloves minced, 2
  • Shallots, 2, roughly chopped
  • Yellow Onion, roughly chopped, 1 cup
  • Vegetable Broth, 3 cups
  • Water, 1/4 cup
  • Fennel Seed, 1 tbsp
  • Salt and Pepper, to taste
  • Olive Oil, 2 tbsp

Directions

  1. Heat olive oil.
  2. Cook shallots, onions, and garlic for 1 minute.
  3. Add broccoli and asparagus, and sautee’ until tender.
  4. Season with spices.
  5. Add broth and water and allow to just come to a boil.
  6. Allow soup to cool slightly if using a food processor, taking caution when transferring hot liquid, to and from food processor back again to stove top to rewarm.
  7. Otherwise, leave hot soup in pot and smooth out vegetables by using a hand-held immersion blender.

Ingredients

  • 1 cup Broccoli Spears Organic
  • 1 cup Asparagus, sliced remove tough ends
  • 2 Garlic cloves minced
  • 2 Shallots roughly chopped
  • 1 cup Yellow Onions roughly chopped
  • 3 cups Vegetable Broth Organic
  • 1/4 cup Water fresh is best
  • 1 tbsp Fennel Seed
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil for sauteeing

Instructions

  1. Saute shallots, onions and garlic on medium low heat for a couple of minutes. Add, broccoli and asparagus, and cook on medium heat until tender. Season with fennel, salt and pepper. 
  2. Add broth and water. Cook soup and veggies on medium high heat, bringing to a boil and finally to a simmer.

  3. Allow soup to cool slightly before either pouring into a food processor or using a hand-held immersion blender to make a deliciously  smooth creamy soup.

Recipe Notes

This yummy and incredibly healthy soup can also be left with a bit of texture by not pulsing or blending for very long, allowing for a slightly chunky consistency.
