These tasty lightly sweetened and low carb sandwich cookies have all the delicious taste and texture of traditional oatmeal cookies and with a wonderful avocado creme filling inside making it a healthy treat as well.

Cinnamon and brown sugar should also be included in this recipe, though it is optional.

Ingredients

For Avocado Creme

  • 1 ripe Avocado mashed
  • 1-1/2 cup Swerve Confectioners
  • 2 tbsp Heavy Cream
  • 1 tsp Vanilla Extract

Dry Ingredients

  • 1 cup Oat Flour
  • 1 cup Almond Flour
  • 1 cup Oatmeal
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon

Wet Ingredients

  • 2 ripe Avocados mashed
  • 1/4 cup Allulose Sweetener
  • 1/2 cup Swerve Light Brown Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 tbsp ZERO Sugar Honey

Instructions

For the Avocado Creme

  1. In a bowl, combine mashed avocados, sweetener, cream and vanilla. Set aside in refrigerator.

For Dry Ingredients

  1. In another bowl, combine flours, baking powder, baking soda, salt and cinnamon.

For Wet Ingredients

  1. In a mixing bowl, blend together mashed avocados, sweetener, brown sugar, egg, vanilla and honey.

  2. Add the dry ingredients to the wet ingredients a little bit at a time. Mix until thoroughly combined.

  3. Roll out dough into medium sized balls and flatten into a medium-sized cookie. Place on parchment lined paper baking sheet and bake for 10 to 12 minutes.

  4. Once the cookies are cooled on a wire rack, cover one cookie half with the avocado cream and top with the other half. Refrigerate for 30 minutes to 1 hour.
