These tasty lightly sweetened and low carb sandwich cookies have all the delicious taste and texture of traditional oatmeal cookies and with a wonderful avocado creme filling inside making it a healthy treat as well.
OATMEAL AVOCADO CREME SANDWICHES
Oatmeal Avocado Creme Sandwich Cookies
Delicious oatmeal cookies with avocado cream sandwiched in between.
Ingredients
For Avocado Creme
- 1 ripe Avocado mashed
- 1-1/2 cup Swerve Confectioners
- 2 tbsp Heavy Cream
- 1 tsp Vanilla Extract
Dry Ingredients
- 1 cup Oat Flour
- 1 cup Almond Flour
- 1 cup Oatmeal
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 1 tsp Cinnamon
Wet Ingredients
- 2 ripe Avocados mashed
- 1/4 cup Allulose Sweetener
- 1/2 cup Swerve Light Brown Sugar
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 tbsp ZERO Sugar Honey
Instructions
For the Avocado Creme

In a bowl, combine mashed avocados, sweetener, cream and vanilla. Set aside in refrigerator.
For Dry Ingredients

In another bowl, combine flours, baking powder, baking soda, salt and cinnamon.
For Wet Ingredients

In a mixing bowl, blend together mashed avocados, sweetener, brown sugar, egg, vanilla and honey.

Add the dry ingredients to the wet ingredients a little bit at a time. Mix until thoroughly combined.

Roll out dough into medium sized balls and flatten into a medium-sized cookie. Place on parchment lined paper baking sheet and bake for 10 to 12 minutes.

Once the cookies are cooled on a wire rack, cover one cookie half with the avocado cream and top with the other half. Refrigerate for 30 minutes to 1 hour.
