Hamantashen Fig Cookies—Purim Treat

Traditional Purim cookie celebration treat.

Ingredients

  • 8 tbsp Butter, unsalted softened
  • 1/2 cup + 3 tbsp Allulose or Sugar
  • 1/4 cup Swerve Brown Sugar packed
  • 1 large Egg
  • 1 tsp Whole Milk
  • 1 tsp Vanilla Extract
  • 1/2 cup All Purpose Flour unbleached
  • 1/2 cup + 2 tbsp Oat Flour
  • 1/4 tbsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 tsp Fig Preserve or Jam or filling of choice

Instructions

For cookie dough

  1. Cream together the butter and sugars until combined.

  2. Add in the egg and continue mixing.

  3. Follow with the milk and vanilla.

  4. In another bowl, whisk together the flour, baking powder, and salt.

  5. Add and mix into the wet ingredients until incorporated.

  6. Place cookie mixture on to Saran Wrap and shape into a flat rectangle.

  7. Refrigerate cookie dough for a couple hours or at least 24 hours.

  8. Preheat oven to 350 degrees.

How to assemble and shape cookies

  1. Roll out dough and cut out into circles.

  2. Place filling fig preserve (or filling of choice) into center.

  3. Pinching top edge of circle with thumb and index finger - pinch into a point and shape into a triangle.

  4. Place on nonstick cookie or baking sheet and bake for 8 to 12 minutes or until lightly and golden brown.
