Preheat oven to 350 degrees.
In a large bowl, combine the ground beef and spices.
Dice red pepper, onion, and jalapeño pepper.
Add the chopped vegetables to the ground beef. Note: Do not overwork the meat.
By hand shape the beef into a rectangular shaped bowl. Note: See photo
Sprinkle meat with grated Parmesan and chopped cilantro.
Bake the meatloaf for 20 minutes and then temporarily remove from oven and set aside.
Meanwhile make the flax bread custard.
In a bowl, whisk together the flour, flax meal, baking powder and salt.
Add the sugar, almond milk, crema, honey, eggs and cooled melted butter. Mix until smooth.
Pour flax batter in the meatloaf bowl and over it. Sprinkle all over with both cheeses.
Bake for 45 to 1 hour
Top with chopped cilantro.
