Bread Custard and Cheese Mexican Meatloaf

Ingredients

For meatloaf

  • 16 oz Ground Beef
  • 1 tbsp Garlic Powder
  • 1-1/2 tsp Smoked Paprika
  • 1 -1/2 tsp Chili Powder
  • 1 tsp Ground Mustard
  • 1 -1/2 tsp Cumin
  • 1 tbsp Adobo Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Red Pepper diced
  • 1/4 cup Onion diced
  • 1 tbsp Jalapeño diced
  • 1 large Egg

For flax bread custard

  • 1 cup Flaxseed Meal (or corn meal can be substituted)
  • 1 cup Almond Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 cup Allulose or sugar
  • 1/4 cup Almond Milk, unsweetened Or whole milk; use a bit more if needed.
  • 2 large Eggs
  • 3 tbsp Mexican Crema
  • 1 tbsp ZERO Sugar Honey, Jalapeño flavored
  • 1 large Egg
  • 3/4 cup Cabot Habernero Cheddar Cheese grated
  • 1 cup Mozzarella cheese shredded
  • Cilantro, chopped 1 tablespoon for inside of meatloaf and for garnishing.
  • 4 tbsp Unsalted Butter melted

Instructions

For the meatloaf

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine the ground beef and spices.

  3. Dice red pepper, onion, and jalapeño pepper.

  4. Add the chopped vegetables to the ground beef. Note: Do not overwork the meat.

  5. By hand shape the beef into a rectangular shaped bowl. Note: See photo

  6. Sprinkle meat with grated Parmesan and chopped cilantro.

  7. Bake the meatloaf for 20 minutes and then temporarily remove from oven and set aside.

  8. Meanwhile make the flax bread custard.

For the flax bread custard

  1. In a bowl, whisk together the flour, flax meal, baking powder and salt.

  2. Add the sugar, almond milk, crema, honey, eggs and cooled melted butter. Mix until smooth.

  3. Pour flax batter in the meatloaf bowl and over it. Sprinkle all over with both cheeses.

  4. Bake for 45 to 1 hour

  5. Top with chopped cilantro.
