Who doesn’t love fresh fruit? Well, try adding them to one of your favorite cookie recipes, such as sugar or even oatmeal. I did and these delicious oatmeal cookies chocked with fresh strawberry pieces are absolutely delicious hot out of the oven. However, don’t burn your tongue in a rush to bite into these, as they will still be just as tasty a tad on the warm side. Also, because this cookie recipe uses fresh fruit, I highly recommend refrigerating any leftover cookies and freezing if longer than a few days, though I don’t foresee that being the case.

Warm Fresh Strawberry Oatmeal Cookies

Crispy oatmeal cookies chocked full of and baked with pieces of fresh strawberries.

Ingredients

Wet Ingredients

  • 2 cups Fresh Strawberries mashed into small chunks or pieces
  • 1 cup Light Brown Sugar
  • 1/4 cup Allulose Sweetener (or Sugar)
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 2 tbsp Butter unsalted and melted
  • 1 tsp Vanilla Extract
  • 1 tbsp Honey

Dry Ingredients

  • 1-1/2 cups Oat Flour
  • 1/4 tsp Salt
  • 1/2 cup- Oats or Oatmeal

Instructions

  1. Preheat oven to 350 degrees.

  2. Add clean, fresh strawberries into a mixing bowl.

  3. Add in both sugars to the strawberries and mash and macerate the strawberries into small chunky pieces until combined.

  4. Stir in the melted butter, and vanilla.

  5. In another bowl, whisk to combine flour, salt, and cinnamon together.

  6. Slowly combine the flour into the wet ingredients in part until thoroughly combined.

  7. Next stir in the oats with a spatula until dispersed throughout the cookie dough.

  8. Scoop out cookie dough and flatten out by hand. Place them several inches apart on to a parchment lined cookie or baking sheet.

  9. Bake for 20 minutes or until or until light golden brown.
