This warm salad recipe is deliciously satisfying and protein packed and it comes together rather quickly.
There are not frills or fuss that comes with preparing this hearty salad. The beans can easily be swapped for another alternative, as well as the spinach to a spring mix blend or romaine.


RECIPE

Warm Artichoke and Garbanzo Bean Spinach Salad
Warm slightly mashed garbanzo beans with briny artichokes, spiced up, and serve over baby leaf lettuce and spinach.
Ingredients
- 1 15 ounce can Garbanzo Beans
- 1 15 ounce can Artichokes
- 1/4 cup Red Onion sliced
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Adobo All Purpose Seasoning
- 1 tsp Black Garlic or Regular Garlic Powder
- 1 tsp Creole Seasoning
- 1/2 tsp Cumin
- 1/2 tsp Cayenne Pepper
- Juice from one lemon
- 8 ounces Fresh Spinach
- 8 ounces Baby Leaf Lettuce or Spring Lettuce Mix
Instructions

Add drained garbanzo beans to a small pot and using a potato masher, mash beans just a bit.

Then stir in the drained can of artichokes.

Cook on medium high heat until the beans are softened and somewhat tender.

Stir in all of the spices and squeeze of lemon juice to season the beans.

Simmer on low heat for an additional 5 minutes. Using the potato masher, mash the cooked and softened beans once more.

Allow the bean mixture to cool down for 5 to 10 minutes before topping over the lettuce and spinach greens.
