Valentine’s Day: These Red Velvet Mini Heart Cake Bites Are Baked From the Heart

Valentine’s day, February 14, 2024, is quickly knocking at the door in just a little over a week from now, so here is a sweetheart of a recipe that I wanted to share with you for your special day of love and romance. It is these Red Velvet Mini Heart Cake Bites that are easy to make, and they bake in literally ten minutes time tops.

Red Velvet Mini Cake Bites

I must make this disclosure, that I did not make these red velvet cake bites with my usual and super delicious red velvet recipe, but they are still quite tasty. I modified this recipe by using 3 different flavors to be exact. And of course, I’m not using white sugar nor white flour in this particular recipe being I have been converted to a low carb, keto and sugar free diet or better yet lifestyle. However, this recipe can be adapted to accompany those of you who would prefer to use refined sugar and white flour instead of the keto-friendly sweeteners and flours I used.

This lightly sweetened dessert recipe is literally baked from hearts—that is, the cake batter is piped inside of 5 metal heart cookie cutters of varying sizes, in order to give them their heart shape. Still their texture is that of a cake, although no leaveners (i.e. baking powder or baking soda) are used, as my goal was not so much for these mini cakes to rise, but to bake similar to that of cookies, but still remain cakey and not crispy.

So, this Valentine Day treat only bakes in 10 minutes, and while it is baking, be sure to whip up your cream cheese frosting in a bowl. Though, only 6 mini cakes are represented here in these photos, the batter recipe should make at least 12 hearts, with just enough frosting, but if it amounts to a little bit more than just lick the bowl, or save it for dipping, or better yet for French toast. 🙂

The final step is to allow the cakes to cool completely on a rack before frosting. After that it’s time to decorate however you choose. However, I kept it simple here by using just cream cheese frosting and heart shaped sprinkles to finish the job.

Red Velvet Cake Mini Heart Bites

Mini red velvet cake, heart shaped bites that are lightly sweetened and with a spread of cream cheese.

Ingredients

  • 3/4 cup Almond Flour
  • 3/4 cup Coconut Flour
  • 1 cup Oat Flour
  • 1/4 tsp Salt
  • 1/4 tsp Cream of Tartar, optional
  • 8 tbsp or 1 stick Butter unsalted
  • 2/3 cups Swerve Granulated Sugar or your choice
  • 2 Egg large
  • 1 tsp Vanilla Extract
  • 1/4 cup Buttermilk
  • 1 serving Watkins Natural Red Food Coloring or your choice Follow box instructions. However, to achieve a brighter red color, more might be necessary.

For cream cheese frosting

  • 4 ounces Cream Cheese
  • 4 tbsp Butter softened
  • 2 tbsp Spectrum Organic Shortening
  • 1/2 cup Swerve Powdered Sugar If the frosting is too thick, add a tablespoon or two of heavy cream or milk. However, if it is too thin, add a bit more sugar.
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Heavy cream or milk More or less if needed.

Instructions

  1. Preheat the oven to 350 degrees.

  2. In the bowl of a mixer, cream together the butter and sugar for several minutes.

  3. Then add in one egg at a time and the vanilla and continue mixing.

  4. In another bowl, whisk to combine the flours, salt, and cream of tartar (i.e. if using).

  5. Next, slowly add in the flour mixture to the wet ingredients, alternating with the buttermilk, and finishing with the dry ingredients.

  6. Continue mixing until the ingredients are incorporated and well combined.

  7. Spoon the cake batter into a piping bag.

  8. Spray the metal cookie cutters with baking or cooking spray and place on a baking sheet.

  9. Pipe the batter into the shape of the heart, about halfway. However, do not pipe the batter to the top of the cookie cutter.

  10. Bake for 10 minutes or until an inserted toothpick comes out clean or with minimal crumbs.

For the cream cheese frosting

  1. In a bowl, cream together the softened cream cheese, butter, shortening, vanilla, powdered sugar, and heavy cream or milk until it light and fluffy or to your desired thickness and consistency.
