Now I have bought many a package of store brought cinnamon rolls as a teenager. Furthermore, I have made my own share of homemade cinnamon buns in my very own kitchen, and of which is my personal preference since I started living a much healthier lifestyle.
This recipe which I’ve adapted by Wholesome Yum, I found to be just as good in pizza form with its cheesy and keto friendly dough.
RECIPE
Cinnamon Roll Pizza Dessert, Keto and Sugar Free
This dessert pizza has all the flavors and taste of a chewy cinnamon bun but just in pizza form with a cheesy and keto friendly fathead dough recipe where almond flour is used for its crust.
Ingredients
For Sweetened Fathead Dough
- 1-1/2 cups Mozzarella Cheese shredded
- 1-1/2 oz Cream Cheese softened
- 3 tbsp Allulose Sweetener
- 1 cup Almond Flour
For Cinnamon Sugar Butter
- 1/4 cup Allulose Sweetener
- 1 tbsp Cinnamon
- 4 tbsp Butter melted
For Vanilla Crème Glaze
- 2 oz Cream Cheese
- 1 tbsp Butter softened
- 4 tbsp Swerve Powdered Sweetener or other
- 1 tsp Vanilla Extract
- 2 tbsp Heavy Cream more if needed
Instructions
For the Fathead Dough

In a microwaveable bowl, combine the mozzarella and cream cheeses.

Melt in the microwave for 60 to 90 seconds stirring in between.

Add and stir in the sweetener and almond flour. Work by hand until a shaggy, stick dough comes together. Place on a board and knead the dough for a few minutes until smooth. Shape into a round disc and refrigerate for 30 minutes. NOTE: The dough will still be slightly sticky.
For the Cinnamon Sugar

In a bowl, combine and mix the sugar, cinnamon and melted butter together and set aside until ready to assemble.
For the Vanilla Crème Glaze

In the bowl of a mixer, mix the softened cream cheese and sugar together. Add in the vanilla and heavy cream, and blend until creamy.

Preheat oven at 350 degrees.

Roll out dough and prick with holes with a fork. Place on a pizza stone or baking sheet. Bake for 15 minutes or until dough is lightly browned. Allow the crust to cool completely before assembling.
For the assembly

Top the crust first with the cinnamon sugar butter. Then either spread or pipe on vanilla glaze. Then slice up and enjoy!
