While Italian food is the absolute champion of my palate and my stomach, Mexican food is a close runner up too. With a FIESTA of foods such as tacos, tortillas, enchiladas making their way routinely to grace my kitchen table, and though prepared in a variety of ways, this is a NEW recipe that is likely to become a staple with my family and I believe yours too—it’s my Tantalizing Taco Soup!

Ingredients
- 1 pound Lean Ground Beef
- 1 Taco Seasoning Package
- 15 ounce can Black Beans, drained
- 15 ounce can Sweet Kernel Corn, drained
- 10 ounce can Green Chilies and Tomatoes
- 1 pound Fire Roasted Tomatoes
- 3 cups Beef Broth
- 1/2 teaspoon Cumin
- 1/2 teaspoon Paprika
- 1/2 teaspoon Cajun Seasoning
- 1/2 teaspoon Cayenne Pepper
- Dashes of Black Pepper
- 2 cups Baby Spinach
Instructions
- Mix in the taco seasoning with the uncooked ground beef.
- Add 1 tablespoon of canola oil to a medium size pot.
- Brown ground beef on medium heat. Note: Drain if needed, as lean beef will produce minimal oil.
- Add beans, corn, chilies, tomatoes, and spices.
- Cook for 10 minutes to allow seasonings to blend.
- Finish by adding in fresh baby spinach.
- Serve warm or hot.
