No Bake Flatbread Rugelach-Honey Pecan and Brown Sugar

I remember making this delectable little treat known as “Rugelach” over a year ago or so, though I knew very little about its food history. What I learned is that it was and is very versatile where the filling in a rolled pastry dough was concerned.

Basically, this rolled up and baked confection treat, and of what I now know to be is of Jewish origin, was filled with foods primarily consisting of raisins, nuts, chocolate, marzipan, spices and sugar. However, in today’s American kitchens, its fillings are basically any food of interest.

So, in my own test kitchen, I thought why not use flatbread to take make my own special Rugelach where there is no wait, and no dough to roll out or bake, and where it could still be wrapped with tasty fillings and rolled out, usually from a triangle shape starting at the base or larger end. Though my Rugelach is not perfectly shaped, the idea behind it is and so is the taste. Anyway, I hope to have the technique mastered on future Rugelach recipe posts. 🙂

The Rugelach I made today uses thin flatbread that I nuked only for a few seconds in order to make it pliable and rollable, not to mention its chewiness layer upon layer. Then I immediately covered it with room temperature, and softened butter. However, olive or coconut oil and sauces can also be used depending on whether the Rugelach is meant to be sweet or savory. These act as the special glue to seal the Rugelach together.

It is then topped with fillings of choice and rolled up and ready to immediately devour. However, I recommend reheating or rewarming the Rugelach a few more seconds after adding the contents so that the bread is still nice and chewy before eating.

No Bake Honey Pecan and Brown Sugar Flatbread Rugelach

Sweet, chewy and no bake flatbread (or lavesh) Rugelach that is ready in minutes.

Prep Time 10 minutes

Ingredients

  • 2 Flatbread slices halved
  • 2 tbsp Unsalted Butter softened
  • 3/4 cup Swerve Brown Sugar
  • 1 tsp Cinnamon
  • 3 tbsp Sugar Free Honey Wholesome Yum
  • 3/4 cup Pecans chopped

Instructions

  1. Chop the pecans, then cover and coat with the honey. Set it aside.

  2. For the flatbread, option 1 is to leave whole as 1 large Rugelach; option 2 to cut in half for 2 medium Rugelach or option 3 to cut into 4 strips for 4 small Rugelach.

  3. Either microwave or warm the flatbreads on the stovetop for 5-10 secs.

  4. Spread the softened butter over each warmed slice.

  5. Top with the sugar and spice mixture.

  6. Next follow by layering with the honey nut mixture.

  7. Roll up the flatbread from the corners and then this flatbread Rugelach is ready to ENJOY!

Recipe Notes

Be sure to use a little extra honey along the edges to help seal bread if needed.

Whenever possible, use organic ingredients.
