Chop the pecans, then cover and coat with the honey. Set it aside.
For the flatbread, option 1 is to leave whole as 1 large Rugelach; option 2 to cut in half for 2 medium Rugelach or option 3 to cut into 4 strips for 4 small Rugelach.
Either microwave or warm the flatbreads on the stovetop for 5-10 secs.
Spread the softened butter over each warmed slice.
Top with the sugar and spice mixture.
Next follow by layering with the honey nut mixture.
