Since I eat chicken probably more than I do anything else including one of my absolute favorite foods—pizza—- I’m always looking for new and delicious ways to reinvent meals and develop unique recipes for my family as well as for you and yours.
So, the other day, I decided that we would enjoy an entire Mediterranean meal starting with the main dish, the sides and even the appetizers too. I had it all planned out. Checkmark! ☑️
I previously shared the appetizer recipe that we enjoyed with the dip of choice Kalamata Mediterranean Hummus with my Mediterranean Tomato Chips for dipping. Finally, I’m ready to introduce the main course in my Mediterranean feast —-my flavor bomb Mediterranean Grilled Greek Chicken Sandwich. Here is just a little bit more before the short recipe that follows as to what I did to give this chicken such FLAVOR…FLAVOR!
I used chicken breasts in this recipe as they were what was available in my freezer at the time. However, thighs are equally as tasty and juicy if available to you and especially if you prefer the dark meat of the chicken over the white, like I do.
Anyway I’ll keep this short and sweet. What gives this chicken (or any for that matter) its amazing flavor is the prep. My Greek chicken set and soaked in my fridge in a delicious Greek marinade for hours. However, first season the uncooked chicken with S&P, poke or pierce the non baked chicken all other with a fork, and then give the chicken a bath in the vinaigrette.
After the hours have passed, grill the chicken indoors or outdoors, until it is done. I grilled the chicken on medium heat for 7 minutes on both sides on a stovetop grill to give the chicken those infamous grilled marks before transferring to the oven for an additional 5 to 10 minutes to insure doneness and maximum juiciness. Also, a thermometer will do the trick.
Mediterranean Grilled Chicken Sandwiches
Greek seasoned chicken breasts with a BOLD Mediterranean flavor sandwiched between two buns with the fixings.
Ingredients
- 3 Chicken Breasts or Thighs
- 1/2 cup Primal Kitchen Greek Marinade or other
- 1/2 tsp Salt both sides
- 1/2 tsp Black Pepper both sides
- 1 /2 tbsp Adobo Seasoning both sides
- Spinach and Baby Lettuce Leaves
- 1/4 cup Kalamata Olives, pitted sautéed
- 1/2 Onions, sliced sautéed
- 2 tbsp Primal Kitchen Mayonnaise
- 1 tbsp Primal Kitchen Greek Marinade
- 3 HERO Buns or other toasted
Instructions

Season chicken breasts, both sides, with salt, pepper and adobo.

Place chicken in a large ziplock bag or container. Add Greek marinade and let seasoned chicken rest in refrigerator for a couple hours.

After chicken has marinated, place chicken on a preheated grill and cook chicken until done. Use a ready read thermometer to check for doneness.

Next, add olives and onions to the same grill pan of the chicken and sautéed until veggies have softened.

Assemble the sandwich by adding 1 tablespoon of Greek vinaigrette to 2 tablespoons of mayo. Spread on both sides of toasted (optional) buns.

Top with lettuce and sautéed vegetables on one half of bun and feta and chicken on the other half. Enjoy!
