I was born with a baker’s heart, and one of my favorite desserts to make and bake are? Yes, you guessed it—it’s COOKIES!
Why is that, you may be wondering? I guess I would say my primary reason is this–they’re simpler and definitely a lot less complex than that of CAKES.
Though I do have a few basic and very tasty cake recipes here, and in time of which I plan to expand my recipe index arsenal, this cookie recipe was derived out of my absolute love of cinnamon rolls.

For starters this, however, is only one variation taken from the traditional and favorite fluffy and chewy cinnamon roll.

RECIPE

Cinnamon Roll Cookies, Variation 1
A delicious play off of the fluffy chewy cinnamon roll in cookie form.
Ingredients
- 2 cups Oat Flour
- 1 cup Light Brown Sugar
- 1 tsp Cinnamon
- Pinch of Salt
- 1 cup Milk
- 1 tsp Vanilla Extract
- 2 tbsp Butter, melted
Sugar Cinnamon Topping
- 1 cup Light Brown Sugar
- 1 tbsp Cinnamon
- Pinch of Salt
- 1/2 tbsp Butter, melted
Vanilla Icing
- 3/4 cup Confectioner Sweetener
- 2 tbsp Coconut Milk more if needed, depending on thickness
- Splash of Vanilla
- 1/4 tsp Salt
Instructions

In a bowl, combine the dry ingredients of flour, sugar, cinnamon and salt and whisk together.

Next, add in milk, vanilla, and melted butter and thoroughly combine. NOTE: This will be a thick, sticky cookie batter.

Using a medium scoop, drop the cookie dough onto a parchment or silicone lined baking sheet. With lightly wet fingers, press to flatten and shape the cookie batter (dough).

Top each cookie round with sugar cinnamon topping, making sure to press the crumbly mixture all over the top of the dough .

Bake in a preheated oven at 350 degrees for 15 minutes until the edges of cookie are golden brown and the center of cookie is set.

In a small bowl, combine confectioners, milk, vanilla and salt. Mix until icing is a nice thick or dense consistency.

Allow the cookies to cool for a few minutes before drizzling with icing.
