By now most of my regular readers and visitors here know that Italian food is my absolute favorite to not only eat but also to prepare and to recipe share and that although all types of pasta dishes are a go-to meal for me—PIZZA is my most sought-after food to binge on, and lately it’s been at home.
I must confess again that I am someone that frequented my local Pizza Hut or Papa John’s pizza joint at least weekly. However, no more. Instead, I realized that I would rather invest in buying organic and using quality ingredients and whole foods to make my own delicious and even healthy pizzas, calzones, pasta dishes, and meals in general because at least I know what’s in my food and how it’s being prepared. Besides, who knew that doing so could be so rewarding and lots of fun. Plus, I have the added benefit of sharing my food interests, recipes, and stories with you too.
Panini are typically made with a thick and crusty bread. However, I decided to use my pantry staple–low carb flatbread instead. So, I hope you’ll try and enjoy this super tasty sandwich or in Italian “panino” recipe as well as create some of your own. SAUTEED PEPPERONI, MUSHROOMS, AND SHALLOT PANINO
Flatbread Pizza Panino (Sandwich): Sauteed Pepperoni, Mushrooms, and Shallots
Sautéed and warmed pepperoni, mushroom, and shallot panino sandwiches on mini Lavash flatbread.
Ingredients
- 2 Atoria's Mini Lavash Flatbreads
- 3 tbsp Pizza or Marinara Sauce more or less
- 2 Mozzarella Cheese slices or 1/2 cup shredded mozzarella
- 2 tbsp Parmesan Cheese, grated
- 12 slices Pepperoni, uncured
- 1/4 cup Mushrooms, chopped organic
- 1-1/2 tbsp Shallots, sliced
- 1 tbsp Olive Oil
Instructions

Preheat oven to 400 degrees.

Chop mushrooms and shallots and set aside.

In a pan, heat up the tablespoon of olive oil. Sauté mushrooms, onions, and pepperoni until veggies are tender. Remove from heat and sprinkle with the grated parmesan.

Spread marinara sauce over one of the flatbread slices.

Add cheese slices to the opposite flatbread. Note: If using shredded cheese, like I did here, sprinkle directly over the warm pepperoni and veggies instead.

Layer and spread hot pepperoni and veggies over the pizza or marinara sauce and sprinkle with cheese. Place the other flatbread half on top.

Bake the panino or pizza sandwiches for 5-7 minutes or until it is warm, and the cheese is melted. Enjoy!
