Flatbread Pizza Panino (Sandwich): Sauteed Pepperoni, Mushrooms, and Shallots

Sautéed and warmed pepperoni, mushroom, and shallot panino sandwiches on mini Lavash flatbread.

Ingredients

  • 2 Atoria's Mini Lavash Flatbreads
  • 3 tbsp Pizza or Marinara Sauce more or less
  • 2 Mozzarella Cheese slices or 1/2 cup shredded mozzarella
  • 2 tbsp Parmesan Cheese, grated
  • 12 slices Pepperoni, uncured
  • 1/4 cup Mushrooms, chopped organic
  • 1-1/2 tbsp Shallots, sliced
  • 1 tbsp Olive Oil

Instructions

  1. Preheat oven to 400 degrees.

  2. Chop mushrooms and shallots and set aside.

  3. In a pan, heat up the tablespoon of olive oil. Sauté mushrooms, onions, and pepperoni until veggies are tender. Remove from heat and sprinkle with the grated parmesan.

  4. Spread marinara sauce over one of the flatbread slices.

  5. Add cheese slices to the opposite flatbread. Note: If using shredded cheese, like I did here, sprinkle directly over the warm pepperoni and veggies instead.

  6. Layer and spread hot pepperoni and veggies over the pizza or marinara sauce and sprinkle with cheese. Place the other flatbread half on top.

  7. Bake the panino or pizza sandwiches for 5-7 minutes or until it is warm, and the cheese is melted. Enjoy!
