I enjoy making my own granola bars and I have for several years now and don’t plan to stop in the foreseeable future, as I purchase relatively few nowadays especially with all of the chemicals and additives. These delicious, both chewy and crispy, Low Carb Coconut and Almond Granola Bars are perfect for my low carb and keto-friendly lifestyle.

Whether you are keto, low carb, or neither of the above—you will enjoy this relatively low in sugar, chewy and crispy granola bar where almond flour is the star along with a few other low calorie players—sugar free brown sugar sweetener, zero sugar honey, a keto granola mix consisting of both coconut and almonds for crunch.

The only sugar in this tasty bar comes from the cherry fruit spread (or your preferred flavor choice) of about 40 calories. The organic cane sugar is 9 gram with added sugar making it a total of 18 grams, which I wish were much lower. However, if you find a brand with no added sugar, then go ahead and grab it, but for now, go ahead and indulge on this non-guilty pleasure. 😊

Low Carb Cherry Coconut Almond Granola Bars

Sweet and crispy cherry fruit and coconut almond granola bars that are low car bars.

Ingredients

  • 1 cup Almond Flour
  • 4 tbsp Butter unsalted
  • 1/2 cup Swerve Light Brown Sugar or other
  • 1/4 tsp Salt
  • 1/2 cup Sprouts Cherry Fruit Spread or other
  • 1-1/2 cup Ratio Keto Coconut Almond Granola or other
  • 3 tbsp Wholesome Yum Zero Honey

Instructions

  1. Preheat oven to 400 degrees.

  2. Melt butter in a saucepan. Add flour and cook for 2 to 3 minutes.

  3. In a large bowl, combine sugar, salt, and granola mix. Add the cooked flour, cherry fruit spread and honey to the mixture. Stir well to combine.

  4. Spread the mixture out evenly into a 8×8 square pan in a thin layer.

  5. Bake in preheated oven for 25 to 30 minutes.

  6. Let bar cool completely. Refrigerate overnight or for several hours to allow bars to firm up before cutting into squares.
