I always look for ways to incorporate veggies in to basically every meal of the day—be it breakfast, lunch and/or dinner. So here is an easy and delicious way to eat healthy and get your spinach in, which is rich in nutrients, either as a crustless frittata or baked inside a crust as a quiche.
Of course, you can select any other vegetable that you may favor, or even add more than one. Either way, this is an excellent dish to serve up veggies and proteins in, like bacon, ham and sausages. However, if you are vegan, just skip the idea. Also, for the dairy free, use egg and other dairy substitutes that can be found in your local grocery store or market.
RECIPE
Cheesy Egg and Spinach Frittata
A healthy egg frittata including lots of spinach and mozzarella cheese with the creaminess of sour cream.
Ingredients
- large Eggs
- 1 cup Sour Cream
- 1/2 cup Whole Milk
- Salt
- 4 cups Fresh Spinach
- 1 cup Mozzarella Cheese shredded
Instructions

Preheat oven to 350 degrees.

In a bowl, combine and mix eggs, milk, sour cream, spinach, half of the cheese, salt and pepper.

On low heat, in an oven ready frying pan, cook egg mixture until edges are barely set.

Remove from heat. Sprinkle top with the other half of cheese.

Bake for 20 minutes or until frittata is fully set. NOTE: If using a crust for a quiche instead, bake for 30 minutes or until crust is golden brown and egg frittata is firm and set.
