Beef, Cauliflower, Chilies and Cheese Tortilla Wrapped Mexican Casserole

Easy Mexican comfort food recipe using seasoned ground beef and cauliflower rice and covered in a delicious red sauce and baked with tortilla wrapped chilies and cheese inside.

Ingredients

  • 1-1/2 pounds Ground Beef
  • 12 ounces Cauliflower Rice
  • 1/4 cup Red Onion, diced
  • 1/4 cup Red Bell Pepper, diced
  • 1/4 cup Green Bell Pepper
  • 2 tbsp Jalapeño Pepper, diced
  • Taco Seasoning (home-made or store bought packet for seasoning ground beef
  • 15 ounces Red Enchilada Sauce
  • 6 mediuum-sized Flour Tortillas
  • 12 ounces Green Chilies
  • 12 ounces Mexican Cheese, shredded
  • 8 ounces Sour Cream for spreading over tortillas
  • 2 tbsp Cilantro, chopped for garnishing
  • 1 or more Avocados for topping
  • 1 or more Tomatoes or Tomatillos, diced for topping
  • 1 tbsp Olive Oil for browning beef

For Home-made Taco Seasoning Mix

  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Mexican Chili Powder
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cajun Seasoning
  • 1/2 tsp Cayenne Pepper
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. Chop and dice up the onion and peppers.

  2. Season ground beef with taco seasoning and add to a hot skillet with 1 tablespoon of olive oil for browning.

  3. Preheat oven to 350 degrees.

  4. Once the beef is mostly (though not completely) browned, add in the onion and peppers. Note: Drain off any excess oil first, before adding vegetables).

  5. Add in the taco or enchilada sauce and bring to a slight boil.

  6. Then add and stir in the cauliflower rice and continue cooking on medium low heat for 3 to 5 minutes. Turn off stovetop and remove from eye.

  7. In the meanwhile, place tortillas on a baking sheet wrapped in foil, place in heated oven and warm for 3 minutes.

  8. Once tortillas have cooled are ready to handle, spread on the sour cream and top with some of the chilies and sprinkle with some of the shredded cheese. Repeat on all of the tortillas.

  9. Place about half of the meat mixture in a 9×12 baking dish.

  10. Then layer with the folded and stuffed tortillas. Next, layer with the remaining meat sauce and top with the remaining cheese.

  11. Bake in the oven for 15 minutes.

  12. Garnish with chopped cilantro or culantro.

  13. Top with chopped tomatoes and sliced or chunks of avocado (optional).

For the Taco Seasoning

  1. Simply combine all of the spices together.
