Old Fashioned Milk Cake

Lightly sweetened cake baked with hot milk and butter, makes this slightly dense and fluffy cake delicious.

Ingredients

  • 4 large Eggs
  • 2-1/4 cups Allulose Sweetener
  • 1-1/4 cups Whole Milk
  • 10 tbsp Butter unsalted and room temperature
  • 1 tsp Vanilla
  • 1-1/4 cup Oat Flour
  • 1 cup Cake Flour
  • 2-1/4 tbsp Baking Powder

Instructions

  1. Preheat oven to 350 degrees.

  2. In the bowl of a mixer, beat eggs until pale yellow and thickened.

  3. Add in the sweetener (or sugar) and vanilla and continue mixing to combine.

  4. In another bowl, whisk the flours and baking powder together.

  5. In a pot on the stove, add the milk and the butter. Heat and warm up the milk and the butter until the butter has melted, stirring periodically.

  6. Pour the hot milk butter combination into the egg and flour mix. Beat until batter is thoroughly incorporated. NOTE: Do not overmix.

  7. Pour into a greased 8X8 baking pan for 30 to 35 minutes or until a toothpick comes out clean or with minimal crumbs.

  8. OPTIONAL: Top with your favorite fruit, whipped or ice cream or simply enjoy as is.
