Glazed Rosemary and Vanilla Cookies

Sweet herbal cookies with rosemary and vanilla as the two stars in this melt-in-your-mouth cookie recipe.

Ingredients

For cookie dough

  • 8 tbsp Butter softened
  • 1/2 cup +3 tbsp Swerve Sweetener or sugar if preferred
  • 1 tbsp Vanilla Extract
  • 3 tbsp Fresh Rosemary chopped; 1/2 reserved for glaze
  • 1 cup All Purpose Flour, unbleached or Oat Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt

For the vanilla glaze

  • 1/2 cup Powdered Sugar more if needed to thicken glaze
  • 1/4 tsp Vanilla Extract
  • 1/2 tsp Whole Milk more if needed to thin glaze

Instructions

  1. Using an electric mixer, cream butter and sugar together. Add in the vanilla and the rosemary, reserving 1/2 tablespoon of the rosemary for the glaze.

  2. In another bowl, whisk the flour, baking powder and salt together to combine.

  3. Add the dry ingredients into the wet, mixing just until incorporated .

  4. Wrap the dough up in saran wrap and shape into a flat disc.

  5. Chill in the fridge for 30 minutes to 1 hour.

  6. Preheat oven to 350 degrees .

  7. Roll out the dough and use a cookie cutter to form cookies.

  8. Bake for 10 minutes. Allow the cookies to cool before glazing.

For the vanilla glaze

  1. Combine sugar, vanilla and milk. Whisk until combined. Add more sugar to thicken glaze if needed or more milk if glaze needs to be thinner.

  2. Add reserved chopped rosemary to the glaze. Then glaze the cooled cookies. Wait for a few minutes to allow glaze to harden and set before diving in.
